Yield 8 cheese sticks and 1/4 cup plus 2 tablespoons sauce.

Number Of Ingredients 15

½ (8-ounce) block reduced-fat Monterey Jack cheese
1 egg white, lightly beaten
¼ cup fine, dry breadcrumbs
Olive oil-flavored vegetable cooking spray
1 tablespoon chopped sweet red pepper
1 tablespoon chopped fresh parsley
1 tablespoon chopped onion
½ (8-ounce) can no-salt-added tomato sauce
½ teaspoon chopped fresh oregano
½ teaspoon chopped fresh basil
½ teaspoon chopped fresh thyme
¼ teaspoon garlic powder
? teaspoon sugar
? teaspoon salt
? teaspoon pepper

Steps:

  • Cut cheese crosswise into 4 (1-ounce) slices. Cut each slice in half lengthwise. Dip cheese sticks into egg white; dredge in breadcrumbs. Repeat coating procedure once, using remaining egg white and breadcrumbs. Place cheese sticks on a baking sheet coated with cooking spray. Freeze 30 minutes.
  • Coat a small saucepan with cooking spray. Place over medium heat until hot. Add red pepper, parsley, and onion; saute 3 minutes or until tender. Stir in tomato sauce and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally. Remove from heat, and set aside.
  • Remove cheese sticks from freezer, and coat with cooking spray. Bake at 450° for 5 minutes or until cheese begins to soften. Serve immediately with tomato sauce mixture.

6 ounces mozzarella, Monterey Jack or Cheddar cheese
30 Keebler (R) Town House (R) Original Crackers (crushed to 1 cup)
1 1/2 teaspoons dried Italian seasoning
1/4 teaspoon coarsely ground pepper
2 eggs
1 tablespoon olive oil
1/2 cup marinara sauce, recipe to follow
1 (8-ounce) can tomato sauce
1 tablespoon olive oil
1 clove garlic
1/4 teaspoon crushed red pepper (optional)
3 to 4 basil leaves, roughly torn

Steps:

  • Cut cheese into twenty-four 1 1/2 x 1/2 x 1/3-inch pieces. In shallow dish combine cracker crumbs, Italian seasoning and pepper. In another shallow dish slightly beat eggs.
  • Line baking sheet with wax paper. Dip cheese pieces in egg. Roll in crumb mixture. Place on prepared baking sheet. 
  • Lightly brush heavy skillet with olive oil. In skillet cook cheese pieces, a few at a time, over medium heat for 2 to 4 minutes or until browned, turning once. 
  • Outdoor Grill Instructions: Preheat grill. Place heavy-duty foil on grill rack. Place cheese pieces on foil-covered grill rack. Cover and grill over medium heat for 2 to 4 minutes or until cheese melts, turning once. Serve with marinara sauce. 
  • Combine tomato sauce, olive oil, garlic and crushed red pepper in a blender and puree. Transfer to a small pot to heat on the stovetop or microwave until warm. Fold in torn basil leaves.
