1 750-milliliter bottle silver tequila (use a high-quality, 100 percent agave tequila)
1 to 2 cups (1/3 to 2/3 of a 750-milliliter bottle) Cointreu or Triple Sec
1 cup freshly squeezed lime juice, plus several tablespoons extra for rimming the glasses
Several tablespoons coarse kosher-type salt, for rimming the glasses
About 1 gallon ice cubes

Steps:

  • Just before serving, in a half gallon pitcher combine the tequila, the minimum amount of Cointreau or Triple Sec and the lime juice. Taste and add more orange liqueur if you think your margaritas need more sweet oranginess to balance the other flavors. Remember, you're tasting it warm and undiluted; when chilled and diluted, the flavors will be mellower and the lime's tartness will be more attractive.
  • Pour several tablespoons of lime juice onto a small plate and several tablespoons coarse salt onto another. Have martini glasses at hand (chill them for an extra special touch).
  • As your guests ask for their margaritas, invert a glass into the plate with the lime juice to moisten rim, then lightly dip into the plate with the salt. For each drink measure 2 ounces (1/4 cup) of the margarita mixture into a cocktail shaker. If you have a 2-ounce ladle that you can keep in the pitcher, measuring goes much faster. Add ice cubes (5 cubes for 1, 8 for 2, 10 for 3). Secure the lid and top and shake vigorously for 10 to 15 seconds. Strain into the salt crusted glasses and hand off to the lucky recipients

Look no further than these large-batch margaritas when you're hosting your next big fiesta and can't spend hours juicing limes. This margarita recipe is a revelation--the secret ingredient is a can of frozen limeade concentrate which, once emptied, doubles as a measuring cup for the remaining ingredients. These margaritas are strong, slightly (but not overly) sweet, and have the perfect note of orange flavor. Oh, and did we mention there's beer involved? We prefer to serve in a large glass drink dispenser with plenty of limes on the side.

1 (12-oz.) can frozen limeade concentrate
12 ounces cold water
12 ounces silver tequila
6 ounces orange-flavored liqueur (such as Triple Sec or Grand Marnier)
1 (12-oz.) bottle Mexican lager (such as Corona), chilled

Steps:

  • Place limeade concentrate in the bottom of a large pitcher or drink dispenser; pour next 4 ingredients (through lager) over the concentrate, stirring with a large spoon until frozen concentrate melts and is evenly dispersed. Serve margaritas over ice with fresh lime wedges.

Give it a stir and then place in the refrigerator to chill.As you are creating margaritas for individual guests, moisten the rim of each glass with a lime wedge and then dip rims in a small plate of coarse salt, for those who prefer a salt-crusted rim. Then pour 1/2 cup of your chilled premix into each glass, followed by simple syrup (a little or a lot, depending on each guest's preference), and give a little stir. Fill with ice almost to the top of each glass, and then squeeze another small lime wedge over the top of each drink for those who like a little extra pucker. Hand off to your guests to enjoy.For the simple syrup:Simple syrup is so easy to make, and takes only about 5 minutes! In a medium saucepan over medium-high heat, stir together water and sugar. Bring to a boil, stirring, until sugar has completely dissolved. Remove from heat and allow to cool to room temperature. Store in a covered jar or container in the refrigerator for 3 to 4 weeks. Use to sweeten any of your favorite beverages.
