I have yet to try this myself, but I have enjoyed other fruits made this way so why not mangos! I think these would be nice in a salad, in salsa or just served as-is after a meal.

Number Of Ingredients 5

1/3 cup organic sugar (aka evaporate cane juice, any natural sugar should work)
2/3 cup water
2 inches gingerroot, sliced thin
3 ripe mangoes, peeled pitted and sliced
3 tablespoons Earth Balance margarine

Steps:

  • Combine sugar, water and ginger in a small saucepan and heat until the sugar is dissolved.
  • Remove from the heat and let cool; when the syrup is completely cooled, remove and discard the ginger. While that cools you can cut up your mangos and melt the margarine/butter.
  • Brush the mango slices with melted margarine/butter and grill until slightly charred (2-3 mnutes), turning once.
  • Place the mangos in a bowl, add the syrup, cover and let cool.
  • When ready to serve, cut the mango into bite-sized chunks or whatever size you need.

2 mangoes, peeled and sliced
3 large tomatoes, sliced
1 red onion, sliced
1 jalape?o, halved and seeded
2 limes, halved
1 garlic clove, minced
1 cup roughly chopped cilantro
Pinch of cayenne pepper
Salt and freshly ground black pepper

Steps:

  • 1. Set the grill to high heat (or heat a grill pan over high heat). Clean and lightly oil the grates. 2. Working in batches, cook the mangoes, tomatoes, red onion, jalape?os and limes on the grill until nicely charred, 3 to 4 minutes. 3. Remove the ingredients from the grill and let cool slightly. Dice the mangoes, tomatoes and red onion. Mince the jalape?o. 4. In a medium bowl, toss all the diced fruit and veggies together, then add the garlic and cilantro and toss well to combine. Squeeze the grilled limes over the mixture, and season with cayenne, salt and pepper. Give it a final toss, and serve.
