Mandarin Duck Dumplings recipe - Simple Chinese Food image

On February 2, the folks in our country have customs such as shaving their heads, offering sacrifices to the gods of Wenchang, eating noodles, deep-fried oil cakes, and eating spring dumplings. People hope to conform to this process by "sacrificing the dragon" to achieve harmony with nature.

Right amount dumpling skin
8 trees spinach
4 egg
1 tbsp Soy sauce
2 teaspoons Sugar
1/2 tbsp sesame oil
Right amount Vinegar
Right amount salt

Steps:

  • Wash spinach and cut off, blanch in boiling water, set aside
  • Take a part of the blanched spinach and cut into puree
  • Beat the eggs, add salt and stir well, set aside
  • Heat oil on high heat, pour egg liquid into the pan, quickly spread the high heat, stir-fry and serve.
  • Take a part of the scrambled eggs and cut into egg paste
  • Squeeze the other part of the blanched spinach into water, add the fried eggs, light soy sauce, sugar, salt, and sesame oil, stir evenly to make dumpling fillings
  • Take the dumpling wrapper, put an appropriate amount of filling, pinch the opposite side, pinch the four corners two by two
  • Put spinach puree and egg puree in the dumpling nests respectively
  • Put on the steamer and steam for 12 minutes on high heat
  • The delicious mandarin duck dumplings are ready~

Chinese Mandarin Pancake

Number Of Ingredients 4

2 cups all-purpose flour
1/2 cup boiling water
1/2 cup cold water
3 tablespoon sesame oil or other vegetable oil

Steps:

  • Pour the flour into a large bowl. Prepare boiling water and a pair of chop stickers. Slowly pour the water in, at the meantime stir the flour in one direction immediately. Then pour the cold water with the same process.
  • Wait for the flour to cool down to room temperature. Then knead the dough until smooth (around 6-10 minutes, you can use a stand mixer to help this process). Cover with wet towel and set aside for 20 to 30 minutes.
  • Transfer the dough into a floured surface. Roll the dough into a long strip and then cut into 10 equal sections. Press each a little bit to a thick wrapper.
  • Prepare two wrappers. Brush some oil on top of one wrapper, and also the bottom of the other one. Press the two together. Roll the overlapped pancake to a large circle.
  • Brush some oil in your pan and then fry the pancake over middle heat until one side becomes slightly browned, turn over to fry the other side until slightly browned too.
  • Tear one pancake from the other one.
