2 cups water
1 1/2 cups dark brown sugar
1 1/2 cups granulated sugar
1/2 cup instant coffee
1 3/4 liters high quality vodka
2 teaspoons pure vanilla extract
1 whole vanilla bean

Steps:

  • Combine the brown sugar, granulated sugar and water in a small sauce pan. Simmer for 10 to 15 minutes until sugar is dissolved.
  • Remove from the heat. Stir in the coffee. Allow to cool completely.
  • Pour into a large plastic container with a lid. Add the vodka, vanilla flavoring and vanilla bean.
  • Cover and let stand for two to three weeks or until fully aged. Kahlua, when properly stored, can last safely for up to a few years.

1 cup mayonnaise
1 cup grated Parmesan cheese
2 1/2 cups shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Lightly grease a 1-quart baking dish.
  • In a medium bowl, mix together artichoke hearts, spinach, mayonnaise, Parmesan and 2 cups of jack cheese. Transfer mixture to the prepared baking dish, and sprinkle with remaining 1/2 cup of jack cheese.
  • Bake in the center of the preheated oven until the cheese is melted, about 15 minutes.
