Low Country Shrimp Boil | Old Bay - McCormick image

Passed down from generation to generation, the low country shrimp boil is best enjoyed outdoors with friends. Cleanup is minimal if you skip plates and serve on paper-covered tables. Just drain the shrimp and pile high where everyone can dig in. Peel, eat and be merry.

Number Of Ingredients 7

1/2 cup old bay seasoning
1 tbsp salt
3 quart water
1 can (12 ounces) beer (optional)
8 medium red potatoes cut in quarters
8 ears fresh corn cut in half
4 pounds large shrimp in shells

Steps:

  • In an 8-quart pot bring OLD BAY salt water and beer to boil on high heat. Add potatoes. Cook 13 minutes.Add corn. Continue to cook 7 minutes. Add shrimp. Cook 4 minutes.Drain and dump contents in the center of a paper-covered picnic table. (Contents of pot can also be divided into several large bowls or buckets.) Sprinkle additional OLD BAY over the top for finger-licking flavor.

2 tablespoons unsalted butter
1 bunch scallions, thinly sliced (white and green parts separated) 
1 bunch scallions, thinly sliced (white and green parts separated)
2 stalks celery, diced
1 green bell pepper, diced
2 tablespoons all-purpose flour
1 teaspoon Old Bay Seasoning
2 cups reduced-fat (2 percent) milk
1/2 cup long-grain white rice
1 1/4 cups corn kernels (from 2 ears corn)
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground pepper

1 tablespoon dry sherry (optional)

Steps:

  • Heat the butter in a large pot over medium-high heat. Add the scallion whites, celery and bell pepper and cook, stirring occasionally, until the vegetables are crisp-tender, about 4 minutes. Add the flour and Old Bay Seasoning and cook, stirring, until the flour is lightly toasted, about 1 minute. Add the milk, 6 cups water and the rice. Bring to a rapid simmer, then reduce the heat to medium and cook until the rice is tender, about 15 minutes. Add the corn to the pot and cook 3 minutes. Stir in the shrimp and cook until they curl and turn opaque, about 3 more minutes. Season the chowder with salt and pepper and stir in the sherry. Ladle into bowls and top with the scallion greens.

Turn down the heat and stir in the pepper jack, Cheddar and mascarpone. Cook for another 3 to 4 minutes. Stir in 2 tablespoons of the butter, season with salt and pepper to taste, and keep warm. Heat the remaining 2 cups stock in a separate saucepan until hot.Meanwhile, heat the oil and remaining 2 tablespoons butter in a large skillet over medium-high heat. Season the shrimp with the Cajun seasoning and some salt and pepper. Add the shrimp to the skillet and cook for 1 to 2 minutes on each side, then remove and set aside. (The shrimp will finish cooking in the sauce.)Add the bacon, onion, red pepper and jalapeno to the skillet and season with salt and pepper. Cook over high heat until beginning to brown, about 3 minutes. Add the tomato paste and cook for 1 minute. Stir in the hot stock and add hot sauce to taste. Return the shrimp to the skillet with any juices that have accumulated. Cook until the shrimp are just cooked through, another 2 minutes. Add the lemon juice. Taste and adjust the seasoning.To serve, spoon the shrimp and sauce over the grits and garnish with scallions.
