LOUISIANA GUMBO ROUX RECIPE - SOUTHERN.FOOD.COM

Louisiana Gumbo Roux Recipe - Southern.Food.com image

Gumbo roux recipe shared with me years ago by a cajun coworker. He didn't give me the measurements on the flour or oil & I haven't made this in years so you might have to tweak the recipe a bit. I thought I had lost the recipe and was very excited to find it today! :)

Total Time 25 minutes

Prep Time 5 minutes

Cook Time 20 minutes

Yield 3 quarts

Number Of Ingredients 9

1 cup all-purpose flour
1/2 cup cooking oil
1 teaspoon salt
1/2 teaspoon black pepper
1 pinch red cayenne pepper
1 small onion, finely chopped
1 bunch green onion, chopped
fresh parsley, finely chopped
1/2 teaspoon white vinegar

Steps:

  • Mix all purpose flour and cooking oil to a peanut butter consistency.
  • Spread about 3/4" thick in a baking dish.
  • Bake at 350 until dark brown. (Be careful not to burn it! If you do, throw it out. It will be bitter).
  • When done, add roux to 3 quarts boiling water. (Approx. 2 tablespoons roux to 1 quart of water).
  • Add all remaining ingredients and your roux is complete!
  • Double or triple the recipe if desired. Roux can be stored in an airtight container in the refrigerator or freezer for weeks.

8 cloves garlic, finely chopped
1/2 green bell pepper, coarsely chopped
6 cups baked okra, sliced 1/4-inch thick and baked for about 10 minutes in baking pan
Roux, recipe follows
6 tomatoes, roughly chopped
Stock, recipe follows
1 pound shrimp heads reserved for stock
2 or 3 crabs, cleaned, and chopped into chunks
Lemon slices
Chopped green onions

1/2 cup flour
Olive oil
9 cups water
Shrimp heads

Creole seasoning (recommended: Dash)
Salt and freshly ground black pepper

Steps:

  • Coat a large heavy-bottomed saucepan with oil and cook the onions until translucent. Add the celery, garlic, bell peppers, and okra. Add the Roux and mix thoroughly to pick up all the excess oil in the pot.
  • Next add the tomatoes and bring the mixture to a boil. When mixed, strain the Stock and add it to the pot, mixing thoroughly to prevent lumps. Cover with lid, bring to the boil and cook for 20 minutes. Clean the shrimp and saute in a separate pan to get rid of any excess moisture. When they have turned pink add the shrimp and crab to the gumbo. Cook for 10 minutes. Lastly, add lemon slices and chopped green onions
  • Combine the ingredients in a separate pan. Brown on a medium high heat until it turns light brown.
  • Combine ingredients in a large heavy bottomed saucepan. Bring to the boil and simmer for 1 hour.

GUMBO BASE (AKA ROUX) RECIPE - FOOD.COM
A roux is the base of numerous Cajun and creole dishes. In Louisiana, natives have a joke about how long it takes to make the roux for certain dishes. Etouffee is usually a 1 beer roux while a full fledged gumbo is a 2 to 3 beer roux. Obviously meaning how long it takes to DRINK the beer. The cook time will vary depending on how dark you want your gravy. NOTE: The measurements I used are normally what I make for a Sunday pot of gumbo, southern style. That means it makes a lot! You may want to only use half for normal people!

VEGETARIAN GUMBO RECIPE - NYT COOKING
This meatless gumbo has a distinct Louisiana flavor, thanks to the roux, Creole seasoning and the “holy trinity” of Creole cooking (onion, celery, bell pepper). Gumbo is traditionally made with a variety of smoked meats and seafood, but this version gets an added bit of smokiness from an optional splash of liquid smoke. Here, the okra is roasted in the oven before being added to the pot, which eliminates the gooeyness. There is also no skimping on vegetables in this gumbo, and the red lentils thicken it while adding protein. Serving this gumbo over white rice helps make it a complete meal.

  • Add the okra and cook uncovered until softened, another 5 minutes. Stir in the hot sauce, and the liquid smoke, if using. Give the cooled roux a good stir and add it to the pot, making sure to mix it in thoroughly, then simmer for 2 to 3 minutes. Taste and adjust the seasoning by adding salt, pepper, creole seasoning or hot sauce, if desired. Serve warm over white rice or quinoa.

SCALLOP GUMBO RECIPE - NYT COOKING
Gumbo is like many regional dishes: there are nearly as many interpretations as there are cooks. Most include the common Louisiana trinity of vegetables: green peppers, celery and onion. Some include meat, often a spicy sausage like andouille, in addition to or in place of shellfish. And while some gumbos rely on okra as a thickener, others use a roux, a combination of flour and fat cooked until brown and tasty. What I like about this gumbo is that it borrows a little from many approaches to create a lighter, more contemporary dish: a one-pot meal that’s ideal for any occasion calling for a crowd-pleaser.

  • Stir in the stock, tomatoes, thyme, oregano, bay leaves and cayenne. Cover, bring to a boil, then reduce heat so soup bubbles steadily. Cook for about 20 minutes or until flavors meld. Add scallops and cook until they are no longer translucent, about 2 minutes. Remove bay leaves. Taste, adjust seasoning and serve, garnished with parsley.
