Who says the only way to enjoy a hamburger is between the buns? Our Easy Hamburger Soup recipe uses extra-lean ground beef and fresh veggies for a soup you won't be able to get enough of! It's got the same savory flavor of your favorite burger, but without all the added carbs. Trust us, you're gonna love this!

1 pound lean ground beef
1/2 cup chopped onion
1 cup thinly sliced carrots
1 cup sliced cabbage
1/2 cup thinly sliced celery
3 cup low sodium, fat-free beef broth
1 cup water
2 tablespoon tomato paste
2 teaspoon Worcestershire sauce
1 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • In a soup pot over medium-high heat, cook ground beef and onion 6 to 8 minutes or until meat is browned. Add carrots, cabbage, and celery and cook 5 minutes.
  • Add remaining ingredients, bring to a boil, reduce heat to low and simmer 25 to 30 minutes, or until vegetables are tender.

1-1/2 pounds lean ground beef (90% lean)
1 medium onion, chopped
1 can (28 ounces) diced tomatoes, undrained
2 cans (14-1/2 ounces each) beef broth
1 cup water
4 celery ribs, thinly sliced
4 large carrots, halved and thinly sliced
1/2 cup quick-cooking barley
1 teaspoon dried thyme
1/4 teaspoon pepper
1/4 cup minced fresh parsley

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth and water. Bring to a boil., Add celery, carrots, barley, thyme and pepper. Reduce heat; simmer, covered, for 10-12 minutes or until vegetables and barley are tender., Remove from heat; stir in parsley. Let stand 5 minutes.
