BLUE CHEESE DRESSING
3/4 cup(s) mayonnaise
2 tablespoon(s) minced garlic
2 tablespoon(s) dried parsley
1/2 cup(s) low fat greek yogurt
2 tablespoon(s) white vinegar
1/4 cup(s) bleu cheese crumbles
salt and pepper
WEDGE SALAD
1 head iceberg lettuce cut in quarters
8 cup(s) baby spinach
4 slice(s) crispy bacon chopped
1/2 pint(s) grape tomatoes sliced in half
1/2 red onion sliced very thin
4 hard boiled eggs peeled and diced
1 avocados peeled and diced
1 1/2 cup(s) diced roasted chicken

Steps:

  • In a small mixing bowl combine mayonnaise, garlic, parsley, yogurt, lemon juice, vinegar and bleu cheese. Season with salt and pepper to taste. Cover and chill for at least 45 minutes.
  • Place iceberg wedges on four large plates. Split spinach up equally and place around wedge. Top with bacon, tomatoes, red onion, eggs, avocado and chicken; split equally between the four plates.
  • Top with the blue cheese dressing or your choice of dressing.

1 head iceberg lettuce
2 tomatoes, chopped (Note 1)
1/2 medium red onion, peeled and diced
4 slices center-cut bacon. cooked and diced (Note 2)
1/2 -1 cup homemade blue cheese dressing (store-bought dressing can be used)
4 ounces crumbled blue cheese
black pepper, to taste

Steps:

  • Cut the iceberg lettuce into 4 equal wedges. Place the wedges on 4 plates
  • Place the wedges on 4 plates.
  • Evenly sprinkle the tomatoes, red onion, and bacon on the lettuce wedges.
  • Drizzle the blue cheese dressing on each wedge.
  • Distribute the blue cheese crumbles on the wedges.
  • Sprinkle pepper on the wedges and serve.
