1/2 cup butter
1 cup sugar
2 eggs
2 egg yolks
6 tablespoons lemon juice
2 teaspoons lemon rind, grated
1 (8 inch) pie shells, baked
2 egg whites
1/8 teaspoon salt
1/4 cup sugar

Steps:

  • Cream butter and sugar until light and fluffy.
  • Add eggs and yolks, one at a time, beating well after each addition.
  • Blend in lemon juice and rind.
  • Cook in double boiler over hot water, stirring constantly, until thickened. Cool slightly.
  • Pour into cool pie shell.
  • Add salt to egg whites, and beat until frothy.
  • Beat in sugar, a tablespoon at a time, continuing to beat mixture will hold soft peaks.
  • Spread over filling, sealing carefully to crust.
  • Bake at 325, for 12-15 minutes, or until nicely brown.

Pastry for single-crust pie (9 inches)
1 cup sugar
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups buttermilk
4 large eggs
1/4 cup butter, melted
1/3 cup lemon juice
1 tablespoon grated lemon zest
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg

Steps:

  • Line a 9-in. pie plate with pastry. Trim, seal and flute edges; set aside. In a large bowl, combine the sugar, flour and salt. , In a large bowl, beat the buttermilk, eggs, butter, lemon juice, lemon zest and vanilla. Add to sugar mixture; mix well. Pour into crust. Sprinkle with nutmeg., Bake at 400° for 10 minutes. Reduce temperature to 325°; bake 40-45 minutes longer or until a knife inserted in the center comes out clean. Cool on a wire rack. Store in the refrigerator.

  • In a medium saucepan, combine sugar, cornstarch, flour and salt. Gradually stir in water. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat. Gradually stir 1 cup of hot mixture into egg yolks; return all to saucepan. Bring to boil. Cook and stir for 2 minutes. Remove from the heat. Stir in the butter, lemon juice and zest until smooth. Pour into pastry shell. In a bowl, beat egg whites and salt until stiff but not dry peaks are formed. Gradually beat in sugar until soft peaks form. Spread over pie, sealing edges to pastry. Bake at 350° for 12-15 minutes or until meringue is golden. Cool. Store any leftovers in the refrigerator.

  • For the crust: Preheat the oven to 400°. Roll 1 ball of pie dough into a 13-inch circle on a lightly floured surface. Transfer the crust to a 9-inch pie plate. Tuck the edges of the crust under to be even with the edge of the pie plate and crimp. Place the crust in the refrigerator for 60 minutes (or freezer for 30 minutes). Line the inside of the crust with parchment paper, then fill with baking weights or dried beans. Bake for 16 to 18 minutes, until the edges of the crust are very lightly golden. (When you rub some of the mixture together in your fingers, you should not feel any texture/sugar granules. If using a thermometer, the temperature should read around 160°.) Transfer the bowl to a stand mixer fitted with a whisk attachment and whisk on medium-high speed for 4 to 5 minutes, until the meringue is glossy and holds a medium-stiff peak. Dollop the meringue over top of the pie to completely cover the lemon filling and swirl with the back of a spoon to make decorative swoops and swirls. Toast the meringue with a kitchen torch or place under a broiler (about 8 inches from the broiler element heated to high heat) for 1 minute, until lightly toasted. Let cool completely to room temperature, then serve.
