KOREAN RICE NOODLES RECIPE RECIPES All You Need is Food image

Here is a vegan Korean rice noodle recipe that I got from a Korean friend of mine when I was stationed there. It's super simple to make, vegan, and low cost. This can be made into a main dish by adding meat if you like. Garnish with cilantro and douse with some sriracha, if desired.

Number Of Ingredients 16

1 tablespoon diced ginger root
1 clove garlic, chopped
¼ cup palm sugar
? cup water
¼ cup tamari
¼ cup almond butter
3 tablespoons sesame oil, divided
2 tablespoons vegan Worcestershire sauce (such as Annie's®)
1 tablespoon rice vinegar
½ teaspoon red pepper flakes
1 (8 ounce) package spaghetti-style rice noodles (such as Tinkyada®), or more to taste
2 small heads baby bok choy, trimmed and chopped
2 large carrots, peeled and cut into matchsticks
1 large zucchini - peeled, seeded, and cut into matchsticks
1 bunch scallions, chopped
1 tablespoon toasted sesame seeds

Steps:

  • Pulse ginger, garlic, and sugar together in a food processor or blender. Add water, tamari, almond butter, 2 tablespoons sesame oil, Worcestershire sauce, rice vinegar, and red pepper flakes. Process again until smooth. Transfer sauce to a small bowl. Cover with plastic wrap and refrigerate until flavors intensify, at least 1 hour.
  • Bring a large pot of lightly salted water to a boil. Cook noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 14 minutes. Toss in bok choy; cook until slightly wilted, about 1 minute. Drain and rinse in cold water to chill the noodles. Toss in a bowl with remaining 1 tablespoon sesame oil.
  • Heat a skillet over medium heat. Add carrots; cook and stir until slightly tender, about 3 minutes. Add zucchini. Cook until tender but not mushy, about 5 minutes.
  • Mix the chilled sauce into the bowl of noodles. Add the carrots and zucchini mixture, scallions, and sesame seeds.

Rachael shares her "silly, silly simple" Korean-style noodles with zucchini, cabbage + sausage in a sweet, tangy, spicy sauce.

Number Of Ingredients 23

¼ cup gochujang
2 tablespoons light soy sauce
2 tablespoons dark soy sauce
2 tablespoons toasted sesame oil
1 tablespoon pourable light brown sugar
Juice of 1 lime
1 medium firm zucchini
julienned
2 leeks
halved and sliced
½ small white cabbage
thinly shredded
2 tablespoons olive or canola oil
1 pound spicy pork
chicken or turkey sausage
1 pound Korean fresh noodles or dried fat soba noodles
2 inches ginger
peeled and cut into thin matchsticks or chopped
4 cloves garlic
chopped or grated
Korean pepper flakes or chopped fresh red or green chili pepper
Toasted sesame seeds and cilantro
to serve

Steps:

  • Heat water to boil for noodles
  • For the sauce, combine ingredients
  • For the noodles, prep veggies
  • Listicle: Rachael Ray Hard Anodized Nonstick Frying Pan with Helper Handle Heat 1 tablespoon oil, a turn of the pan, in large cast-iron or nonstick skillet over medium-high heat
  • Add the sausage and brown and crumble, then add the veggies and soften 2 minutes
  • Cook noodles to package directions
  • Add ginger, garlic and chili to veggies and sausage, then add noodles
  • Pour sauce over the dish and combine
  • Top with sesame seeds and cilantro to serve

Add the red pepper, garlic and scallions to the pan, reduce the heat to medium-high and cook for an additional 3 minutes, or until the peppers are beginning to soften. Add the kale and the cooked noodles and saute another 3 minutes, stirring often to coat the noodles in the oil and to wilt the kale. Add the sauce and toss to coat. Top with sesame seeds if desired.
