We've captured the fresh taste of summer in our key lime-cream cheese crumble cake that uses Betty Crocker™ Super Moist™ vanilla cake mix as the base.

1 box Betty Crocker™ Super Moist™ vanilla cake mix, reserving 1 cup for topping
1/2 cup butter, melted
1 egg
1 package (8 oz) cream cheese, softened
1 can (14 oz) sweetened condensed milk (not evaporated)
3/4 cup Key lime juice
2 eggs, beaten
Reserved 1 cup cake mix
1 cup chopped pecans, walnuts or combination of both
3 tablespoons butter, softened
Powdered sugar for garnish

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, reserve 1 cup of the dry cake mix for the topping; set aside.
  • In medium bowl, mix remaining cake mix, 1/2 cup melted butter and 1 egg until well combined. Press in bottom of pan; set aside.
  • In large bowl, beat cream cheese, sweetened condensed milk, lime juice and 2 eggs with electric mixer on medium speed until smooth. Pour filling evenly over base in pan.
  • With fork, mix reserved cake mix with pecans and 3 tablespoons softened butter until crumbly. Sprinkle evenly over filling.
  • Bake about 45 minutes or until golden brown. Cool in pan at least 20 minutes. Before serving, sprinkle individual servings with powdered sugar.

Once you get the hang of the method you can swap in different citruses and nuts to DIY your own bars. Try a grapefruit-almond combo, or a lemon-cashew twist.

Crust
1?¾ cups all-purpose flour, divided
¾ cup unsweetened shredded coconut
¾ cup salted roasted macadamia nuts
¾ cup packed light brown sugar
¾ cup (1½ sticks) unsalted butter, softened
¼ teaspoon baking soda
¼ teaspoon kosher salt
Filling
2 14-oz. cans sweetened condensed milk
3 large egg yolks
1 tablespoon lime zest plus 1 cup fresh juice (from 8 limes), plus more zest for serving

Steps:

  • Make the crust: Preheat oven to 350°F. Line a 9-inch square baking pan with parchment. Combine flour, coconut, nuts, sugar, butter, baking soda, and salt in a food processor. Pulse until crumbly but beginning to clump together, about 15 pulses. Set aside 1½ cups flour mixture for topping. Firmly press remaining flour mixture into bottom of prepared pan. Bake until crust begins to brown, about 20 minutes. Let cool for 10 minutes.
  • Make the filling: Whisk condensed milk, yolks, lime zest, and lime juice in a medium bowl until smooth. Pour over crust and sprinkle with reserved flour mixture.
  • Bake at 350°F until filling is just set and topping is light golden brown, 22 to 24 minutes. Let cool completely on a wire rack. Refrigerate for at least 1 hour and up to 3 days. Cut into 12 bars and garnish with lime zest.
