2 cups unsalted butter (samn balady)
1 cup whole milk
4 1/2 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon instant yeast
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
powdered sugar

Steps:

  • Heat the samn balady until almost boiling.
  • In seperate bowl, add the baking powder and the spices to the flour.
  • Slowly add the flour mixture to the hot samn balady and stir thoroughly.
  • When the mixture cools (warm to touch), add the instant yeast to the milk with a teaspoon of sugar, then stir gently into the dough.
  • Knead it for a short while, cover and let it rest for an hour.
  • Shape dough into balls, then flatten them.
  • Inserts nuts, honey, sugar, agwa (date spread), or other filling when you are making it into balls.
  • Put them on a cookie tray and let them rest.
  • Bake in preheated oven (345 F) until golden.
  • Cool and sprinkle with powdered sugar just before eating.

Kahk, or Ka'ak al-Eid (Arabic: ??? or ??? ?????), is a small circular biscuit eaten across the Arab world to celebrate Eid al-Fitr and Easter. Ramadan's Middle Eastern Dessert palooza has come to an end and we're sealing it with Eid Cookies! So roll up your sleeves people because we're about to get covered in powdered sugar!

Number Of Ingredients 4

flour
unsalted butter, softened
powdered sugar and extra for dusting
vanilla extract

Steps:

  • Mix butter, sugar and vanilla with a stand mixer or by hand with a whisk.
  • Start adding the flour cup by cup until you have a dough that holds together and easily forms into a ball.
  • Cover the dough with plastic wrap and chill for an hour or overnight in the refrigerator.
  • Preheat the oven to 180 degrees C.
  • Get out the dough and start forming it into small balls (around 15 grams each)
  • Place the formed pieces of dough on to a baking sheet/pan and they don't spread so don't worry about spacing them apart.
  • Put then in the oven, mine took around 40 to 45 mins. Keep a close eye on them and get them out when the edges of the cookies turn a bit golden.
  • When they cool down, transfer to the serving dish and dust them generally with powdered sugar. Bon Appetit.
