- Preheat the oven to 160°C/325°F/gas 3.
- Place the ham in a roasting pan. Peel the onion and cut into wedges, then add to the pan with the peppercorns and bouquet garni.
- Add water until it comes halfway up the side of the pan. Cover the ham with foil (making a tent to allow steam to circulate). Bake for 1½ hours or until pink and cooked through, then remove from the oven and cool for 30 minutes, leaving it covered.
- While it’s still warm, you will need to carefully remove the skin, keeping the fat attached to the ham. With a sharp knife, score the ham by making diagonal cuts across the leg.
- To make the jerk seasoning, peel and chop the garlic and shallots, deseed and chop the scotch bonnets and finely chop the chives. Blend all the ingredients with a decent pinch of sea salt in a food processor until smooth.
- Rub the jerk seasoning all over the ham and scored fat, cover in clingfilm and pop in the fridge overnight, preferably 24 hours.
- Preheat the oven to 180°C/350°F/gas 4.
- Combine the glaze ingredients in a bowl. Remove the ham from the fridge, scrape off the excess seasoning and bake for 1 hour.
- Remove from the oven, brush with the glaze, then continue cooking the ham for another 30 to 40 minutes, basting with the glaze every 10 minutes until crisp, golden and sticky.

- 1. Peel the garlic and red onions, and halve and deseed the Scotch bonnets, then place in a food processor – wash your hands thoroughly afterwards. Add the chives, sugar, rum, vinegar, all the spices and the salt. Pull off and discard the bay stalks, then add the leaves to the processor. Strip in the thyme leaves and blitz until very finely chopped. 2. Place the ham on a board and trim off the outer layer of skin, leaving a 1cm layer of fat behind. Score the fat all over in a criss-cross pattern, making sure you don’t cut down into the meat itself. Transfer the ham to a roasting tray and pour over the marinade. Rub it all over the meat, getting into all the nooks and crannies, then cover with clingfilm and place in the fridge to marinate for at least 2 hours, but preferably overnight. 3. When you’re ready to cook, preheat the oven to 180ºC/350ºF/gas 4 and leave the ham to come up to room temperature. Cover the tray with tin foil and reheat according to pack instructions. Around 40 minutes before the time’s up, remove the foil and pour over the rum. Add the marmalade and orange juice to the tray and mix together with the pan juices. Brush the glaze all over the ham and return to the oven for the remaining time, brushing and spooning the juices and rub over the top every 5 to 10 minutes until dark, stick and gnarly. Once glazed to perfection, remove to a board to rest for 30 minutes before carving into nice thick slices. Pour the cooking juices into a jug, skimming away the fat – it’ll make an epic spicy gravy to drizzle over at the end, if you like. Serve with a fresh, crunchy salad and some Spiced peach chutney. Jamie's Tip: Using a herb brush to baste the ham will infuse it with lovely flavour. Tie a bunch of woody herbs together at the stalk-end to create a brush, then bruise the leafy end by lightly bashing it with the bottom of a pan – this will release the oils and help amplify the flavour.

- In a blender, combine green onions, garlic, jalapeño, lime juice, oil, brown sugar, allspice, thyme, cinnamon, 1 teaspoon salt, and 2 tablespoons water and blend until smooth. Set aside 1⁄4 cup. Place chicken in a shallow dish and season with salt. Pour remaining marinade over chicken; toss to coat. Let marinate in fridge, turning once or twice, at least 2 hours or up to overnight. When ready to grill, heat grill to medium-high and oil grates. Grill chicken, turning occasionally, until chicken is charred in spots, about 10 minutes. Get your meat out of the fridge and up to room temperature before you cook it. Preheat the oven to 160°C/325ºF/gas 3. Place the gammon in a deep roasting tray with the peppercorns and bouquet garni. Peel the onion, cut into wedges and add to the tray. Pour in enough water to come halfway up the side of the tray, then cover it with tin foil. Bake for 1 hour 30 minutes, then remove from the oven and leave for 30 minutes, keeping it covered. Now, while it’s still warm, carefully remove the skin, keeping the fat attached to the ham. With a Stanley knife, score the ham by making lots of diagonal cuts across the leg.
Turn the oven up to 180º/350ºF/gas 4. To make the jerk seasoning, peel the garlic and shallots, deseed the chillies, and place them all in a food processor. Strip in the thyme leaves, tear the bay leaves off the stalks, and add the leaves to the processor with all the other jerk ingredients and 1 tablespoon of sea salt. Blitz it up until smooth, then brush or rub (wearing gloves!) it all over the ham and scored fat. Bake the ham for 1 hour.
For the glaze, squeeze the orange juice into a bowl and mix with the rum and marmalade. Remove the ham from the oven, pour over the glaze, then roast for another 30 to 40 minutes, basting with a brush every 10 minutes, or until cooked through, sticky and golden. Remove the ham to a board, ready to slice hot, cold or at room temperature. Pour all the spicy fat into a jar, cool, and place in the fridge for tasty cooking another day.
