Orange food coloring

Melted chocolate chips (transferred to a small ziplock)

Vanilla ice cream

Orange and black sprinkles

Steps:

  • Inflate 4 small balloons to desired bowl size. Line a baking sheet with parchment paper. Set aside. Pour white chocolate chips into a large microwave-safe bowl and add 4 to 5 drops orange food coloring. Heat in microwave in 30-second intervals, until the chocolate is melted and smooth. Working one at a time, dip the bottom of each balloon into the chocolate, rolling it around to make sure all sides are evenly coated. Transfer to parchment paper lined baking sheet to set for at least 1 hour. Repeat to make 3 more bowls. Once the bowls are set, very carefully pipe jack-o-lantern faces with the melted chocolate. Let set another 5 minutes. Pop balloons and remove them from the bowls. Scoop ice cream inside and serve immediately.

1 cup canned pumpkin
½ cup white sugar
½ teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
2 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
½ cup brown sugar
¾ cup shortening, softened
1 egg
¼ cup molasses
1 cup rolled oats

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Mix pumpkin, sugar, cinnamon, ginger, and nutmeg in a bowl until thoroughly combined. Set aside.
  • Sift flour, salt, and baking soda together in a large bowl. Stir in brown sugar, shortening, egg, and molasses, mixing until smooth. Fold in rolled oats.
  • Roll cookie dough out to 1/8 inch thick on a lightly floured surface. Cut out 48 circles using a 2 1/2 inch cookie cutter. Arrange 24 of the circles on a baking sheet and place a teaspoon of pumpkin filling on each. Cut Jack-O-Lantern faces on the remaining 24 circles, then lay the faces over the pumpkin filling, sealing the edges.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
