2 tablespoons olive oil
3 tablespoons butter
1 onion (peeled and finely chopped)
2 cloves garlic cloves (finely chopped)
4 ripe tomatoes (chopped)
1 tablespoon sun-dried tomatoes (finely sliced)
2 cups Risotto
0.375 cup dry white wine
4 tablespoons tomato passata
4 cups chicken stock (or vegetable broth)
salt
peppers
3 tablespoons butter
1 cup Parmesan (shaved)
1 bunch Basil

Steps:

  • Heat the oil and butter in a large pan and add the onion and garlic. Cook until soft and translucent.
  • Add the fresh and preserved tomatoes to the pan. Add the rice and stir to coat in the butter.
  • Pour in the wine and stir the rice while the wine is absorbed, then stir in the passata.
  • Once the wine has cooked in, reduce the heat a little and add the hot stock, a ladleful at a time, stirring fairly continuously. This will give the risotto its creamy texture.
  • Keep stirring in the stock and tasting the rice. After about 15-20 minutes the rice should be soft but with a slight bite. If you’ve run out of stock before the rice is cooked, simply use water.
  • Season and remove from the heat. Add the butter and Parmesan (mantecatura) and leave to melt into the risotto.
  • Stir through the basil and serve immediately.

8 cups fresh spinach (about 10 ounces), chopped
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups hot cooked rice
1/2 cup chopped roasted sweet red peppers

Steps:

  • In a large nonstick skillet, saute garlic in oil for 1 minute. Stir in spinach. Cover and cook for 3-4 minutes or until tender; drain well. Add the vinegar, salt and pepper. Stir in the rice and red peppers until combined. Cook and stir until heated through.
