Popeyes Spicy Mayonnaise - Top Secret Recipes image

The ridiculously popular crispy chicken sandwich at Popeyes comes with your choice of regular mayonnaise or kicked-up spicy mayonnaise. Fortunately, I was able to hack the sandwich before it sold out just a couple weeks after its debut (get the recipe here), but that recipe includes just plain mayonnaise. Recently I had the chance to hack the secret spicy mayonnaise, and I’m glad I did. Popeyes chicken sandwich with regular mayonnaise is crazy good, but with spicy mayonnaise, that sandwich is great. You can use this sauce on a variety of sandwiches and burgers, or as a dip for chicken fingers, nuggets, and fried shrimp. This easy Mexican Street Corn recipe uses a tasty combination of mayonnaise, cotija cheese and lime juice.

Ingredients

2 tablespoons olive oil
16 ounces frozen corn
from 3-4 ears
3 tablespoons mayonnaise
3-4 ounces Cotija cheese or feta
crumbled
2 tablespoons lime juice
fresh
1 tablespoon jalapeño peppers
finely chopped
⅓ cup fresh cilantro leaves
finely chopped
2 tablespoons red onion
finely chopped
2 cloves garlic
minced
½ teaspoon chili powder
Salt and pepper
to taste

Steps:

Add olive oil to a large skillet over medium heat
Add the corn and let cook until the corn starts to char
This will take 7-8 minutes and you need to stir the corn often while it cooks
In a large bowl, mix together the mayonnaise, cheese, lime juice, peppers, cilantro, red onion, garlic, and chili powder
When the corn is done, fold it into the other ingredients
Taste for seasoning
Add salt and pepper to your taste
Serve immediately

In a small bowl, whisk together the flour and ¼ teaspoon each salt and pepper. Lightly beat the egg whites in a second small bowl. In a third small bowl, combine the panko with the oil. Cut avocados into ½-inch-thick slices. Working with one slice at a time, coat avocado slices lightly in flour, then in the egg, letting any excess drip off and finally in the panko, pressing gently to help it adhere. Spray or brush the air fryer basket with oil. Spray or brush the avocados. In batches, place the avocado slices in the basket in a single layer and air-fry at 400°F until golden brown, 6 minutes. Meanwhile, finely grate the lime zest into a large bowl, then squeeze in 2 tablespoon juice. Whisk in the mayonnaise and a pinch of salt. Add the cabbage, scallions and jalapeño and toss to coat; fold in the cilantro. Serve the avocados and slaw in tortillas with lime wedges and sour cream if desired.
