French bread
2 tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees.
  • Slice bread into 1/4 inch thick slices.
  • Place bread slices on baking stone or pan.
  • Brush tops lightly with olive oil-if you do not have a pastry brush, you can pour some olive oil into a bowl and simply dip the slices in it.
  • Bake 10-12 minutes or until slices are lightly browned.

12 Baguette
2 cloves garlic (halved)
4 tablespoons olive oil
4.5 ounces black Olives (pitted)
1 tablespoon Caper
1 tablespoon Pine nuts (toasted)
2 tablespoons Tomato paste
2 teaspoons balsamic vinegar
peppers
sliced tomatoes
cilantro

Steps:

  • Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking tray.
  • Rub the bread slices with the cut cloves of garlic and drizzle with 2 tablespoons olive oil. Put on othe baking tray and cook for 5-8 minutes, until golden.
  • Put the olives, capers, pine nuts, tomato paste, vinegar and remaining olive oil into a blender and process to a paste. Season to taste with pepper.
  • Spread on the bread slices and garnish with sliced tomatoes and coriander leaves.
