This was a staple in my home growing up and is usually served over biscuits, with corn bread, bacon, eggs, and cheesy grits.

1 (1 pound) package bacon
1 teaspoon butter
2 tablespoons flour
2 (28 ounce) cans whole tomatoes
2 teaspoons salt
4 teaspoons ground black pepper
1 (3 ounce) package cream cheese, softened
½ cup heavy cream

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Reserving the drippings in the pan, remove the bacon to a paper towel-lined plate to drain.
  • Stir the butter and flour into the bacon drippings. Scrape the browned bits of food off of the bottom of the pan with a wooden spoon; cook and stir together until beginning to thicken, about 3 minutes. Stir the tomatoes into the mixture, using the spoon to break the tomatoes into small pieces while cooking; season with salt and pepper. Add the cream cheese and heavy cream; reduce heat to medium-low and simmer, stirring frequently, until hot and thick, about 10 minutes.

My mother-in-law gave me this tomato gravy recipe. It's her very favorite breakfast. We—my husband, our two sons and I—also enjoy it for a light supper. Especially on a cold day, it's great with warm peach cobbler or bread pudding. —Laurie Fisher, Greeley, Colorado

1/2 pound bacon strips, diced
1 small onion, chopped
2 tablespoons all-purpose flour
1/8 teaspoon salt
Pinch pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
3 cups tomato juice
8 hot biscuits, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan.
    Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in flour, salt and pepper until blended; cook and stir over low heat until mixture is golden brown (do not burn). Gradually whisk in tomato juice. Stir in tomatoes. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 10-15 minutes, stirring occasionally. Stir in bacon. Serve over biscuits.

I've been eating creamed tomatoes over biscuits or cornbread my entire life. It's so yummy! For those who've never had it, it tastes similar to creamy tomato soup, but it's thicker. I grew up in rural West Virginia, and everyone always called it creamed tomatoes, but a few years ago, I found out that some people call it tomato gravy. Either way, it's the same thing. Tomato gravy recipes usually start with a can of diced tomatoes, but we developed this one using beefsteak tomatoes for a fresh, summer taste. You will enjoy the vibrant, mildly acidic, and slightly sweet flavor that can only be gleaned from using fresh tomatoes. Make sure your tomatoes are good and ripe so that they release their liquid into the gravy. Beefsteaks are the “all purpose” tomato, ideal for sauces, BLT sandwiches and main dish salads. They are not only brilliantly red and consistent in their size, but even in a perfectly ripe state they are durable enough for any application, especially sautéing and crushing for this gravy. The blanch and shock method to remove skin doesn’t change the interior of the beefsteak, and their firm but tender texture is ideal for quick cooking methods. To remove the skin, make an X on the bottom of each tomato and put them in a pot of boiling water for no more than a minute. Using a slotted spoon, remove them from the hot water and plunge them into an ice bath or bowl of cold water. Working quickly, remove the tomatoes, one at a time, from the cold water and peel back the skin with a knife or your fingers.
