I've looked all over the net and haven't found a shrimp ceviche quite like this one! My friends absolutely love it and beg me for the recipe! You can always double it for larger parties--it goes FAST! Serve as a dip with tortilla chips or as a topping on a tostada spread with mayo. The fearless palate might like this with hot sauce.

1 pound peeled and deveined medium shrimp
1 cup fresh lime juice
10 plum tomatoes, diced
1 large yellow onion, diced
1 jalapeno pepper, seeded and minced, or to taste
2 avocados, diced
2 ribs celery, diced
chopped fresh cilantro to taste
salt and pepper to taste

Steps:

  • Place shrimp in a glass bowl and cover with lime juice to marinate (or 'cook') for about 10 minutes, or until they turn pink and opaque. Meanwhile, place the plum tomatoes, onion and jalapeno (and avocados and celery, if using) in a large, non-reactive (stainless steel, glass or plastic) bowl.
  • Remove shrimp from lime juice, reserving juice. Dice shrimp and add to the bowl of vegetables. Pour in the remaining lime juice marinade. Add cilantro and salt and pepper to taste. Toss gently to mix.

shrimp, peeled and deveined

Juice of 7 limes

Juice of 1 orange

1/2 c.

red onion, diced

2

jalapeños, minced

1 c.

cucumber, seeded and diced

1 c.

chopped cherry tomatoes

2 tbsp.

freshly chopped cilantro

1/4 c.

mayonnaise

2 tbsp.

hot sauce

avocado, sliced

Steps:

  • Bring a large pot of salted water to a boil. Turn off heat, add shrimp, and poach until shrimp are pink and cooked through, about 3 minutes. Drain, let cool, then cut shrimp into bite-size pieces. In a large bowl, combine shrimp with lime juice, orange juice, onion, and jalapeños. Season with salt, then let marinate in the refrigerator, 1 hour. Stir in cucumber, tomatoes, and cilantro, and season with salt and pepper.  In a small bowl, mix together mayo and hot sauce. Spread spicy mayo onto tostadas, then add ceviche. Top each tostada with sliced avocado and serve immediately. Remove tails from shrimp and cut into bite-sized pieces. In a large bowl, combine shrimp with lime juice, orange juice, onion, and jalapeños. Season with salt, then let marinate in the refrigerator until shrimp is opaque and firm, 4 hours. Stir in cucumber, tomatoes, and cilantro, and season with salt and pepper.  In a small bowl, mix together mayo and hot sauce. Spread spicy mayo onto tostadas, then add ceviche. Top each tostada with sliced avocado and serve immediately.
