Frosé (Frozen Rosé) Recipe

Provided by Rick Martinez

Yield Makes 4 to 6 Servings

Number Of Ingredients 4

1 750 ml bottle hearty, bold rosé (such as a Pinot Noir or Merlot rosé)
½ cup sugar
8 ounces strawberries, hulled, quartered
2½ ounces fresh lemon juice

Steps:

  • Pour rosé into a 13x9" pan and freeze until almost solid (it won't completely solidify due to the alcohol), at least 6 hours.
  • Meanwhile, bring sugar and ½ cup water to a boil in a medium saucepan; cook, stirring constantly, until sugar dissolves, about 3 minutes. Add strawberries, remove from heat, and let sit 30 minutes to infuse syrup with strawberry flavor. Strain through a fine-mesh sieve into a small bowl (do not press on solids); cover and chill until cold, about 30 minutes.
  • Scrape rosé into a blender. Add lemon juice, 3½ ounces strawberry syrup, and 1 cup crushed ice and purée until smooth. Transfer blender jar to freezer and freeze until frosé is thickened (aim for milkshake consistency), 25–35 minutes.
  • Blend again until frosé is slushy. Divide among glasses.
  • Do Ahead: Rosé can be frozen 1 week ahead.

THE EASIEST-EVER WAY TO MAKE FROSÉ—FROZEN ROSÉ—AT HOME RECIPE

The Easiest-Ever Way to Make Frosé—Frozen Rosé—At Home Recipe image

How do you cool down on a sultry summer night, a chilly glass of rosé or a fruity frozen drink? Here’s some good news: if you have a blender and an ice cube tray, you no longer have to choose. Frosé—A.K.A. frozen rosé—has become the “it” drink of the summer in recent years, popping up on cocktail menus from coast to coast and overflowing our Instagram feeds. And why not? Whirred from a combo of strawberries, wine, grenadine, and a shot of vodka, this pretty pink treat is one part adult slushie, one part sangria, and entirely delicious. If you feel like playing around, you could swap cherries or raspberries in for the strawberries or use a splash of tart Campari in place of the grenadine.

Provided by Betty Gold

Total Time 8 hours 15 minutes

Yield Serves 4-6

Number Of Ingredients 5

1 (750 ml.) bottle of dry rosé
10 ounces fresh strawberries (about 2 cups, sliced), plus more for garnish (optional)
1 tablespoon granulated sugar
¼ cup vodka
2 tablespoons grenadine

Steps:

  • Pour the rosé into ice cube trays and freeze until solid, 8 hours or overnight.
  • Combine the strawberries and the sugar in the bowl of a blender and let sit at room temperature for about 10 minutes, until the berries begin to release their juices.
  • Add the vodka, grenadine, and rosé cubes. Blend the mixture on high until smooth. Pour into glasses and garnish with strawberries, if desired.

HOMEMADE RED WINE VINEGAR RECIPE - NYT COOKING
This simple recipe for homemade vinegar comes from Harry Rosenblum, a founder of the Brooklyn Kitchen and the author of “Vinegar Revival.” To make it, you’ll need a little raw, live, unpasteurized vinegar, or a vinegar mother (which you can buy online, or pick up from a vinegar-making friend). Be sure to aerate the wine before you start, which helps get it ready to ferment, and remember that the timeline in the recipe is a only a guide: The best way to get a sense what’s happening as your alcohol transforms into vinegar is to observe it and taste it frequently. Instead of red wine, you can also try the recipe with a rosé, sake, hard cider or your favorite beer. Just keep in mind that if the beverage has an alcohol content of 8 percent or lower, there’s no need to add water at the beginning.

  • After about 2 months, when the alcohol has acidified, or when a taste of the vinegar makes your mouth pucker, it's ready to strain and bottle. (You can save the mother to begin a new batch.) The vinegar can be used as is, or aged in the bottle for up to a year to mellow its flavor.
