Arroz Rojo (Mexican Red Rice) Recipe | Allrecipes image

Authentic Mexican red rice. Easy to make! Use a different chile if you want milder or hotter rice.

2 Roma (plum tomatoes), cored
2 tablespoons vegetable oil
1 cup minced onion
2 cloves garlic, minced
1 cup uncooked long-grain white rice
1 ¾ cups low-sodium chicken broth
¼ cup canned tomato sauce
1 jalapeno pepper, chopped
2 sprigs fresh cilantro
salt to taste

Steps:

  • Grate tomatoes into a bowl using a box grater; discard tomato skins.
  • Heat vegetable oil in a heavy skillet over medium-high heat and cook onion until translucent, stirring often, about 5 minutes. Stir garlic into onion and cook until fragrant, about 1 minute.
  • Stir rice into onion mixture and cook, stirring often, until rice is lightly toasted, about 3 more minutes. Stir grated tomato, chicken broth, and tomato sauce into the rice. Bring mixture to a boil.
  • Mix in jalapeno pepper, cilantro, and salt; reduce heat to low. Cover skillet and simmer until rice has absorbed the liquid, about 15 minutes. Do not lift the cover while the rice is cooking.
  • Turn off heat and let rice stand covered for 8 minutes. Fluff with a fork before transferring rice to a serving dish.

"We're making sofrito-style rice," Rach says, about the aromatic combo of carrots, onions + peppers used to flavor her Mexican red rice.

Number Of Ingredients 22

1 tablespoon olive oil or canola oil
1 small sweet pepper (Bell
cubanelle or frying pepper)
seeded and chopped
1 small chili pepper
seeded and chopped (optional)
1 onion
chopped
2 to 3 cloves garlic
chopped
1 carrot
peeled and finely chopped (optional)
Salt and pepper
2 teaspoons chili powder
1 teaspoon ground cumin
1 ½ cups white rice 
2 cups chicken broth
stock or brodo
1 cup fresh peas
One 8-ounce can tomato sauce
1 lime
One handful chopped cilantro or parsley 

Steps:

  • Heat oil in a pot over medium to medium-high heat and add peppers, onions, garlic, and carrots if using, season with salt and pepper and spices, soften a couple of minutes, then add rice, stir a minute more, add broth, bring to boil, reduce heat to low and cover pan, cook 10 minutes, shaking occasionally
  • Add peas and tomato sauce, stir, cover and cook 5 to 8 minutes more until rice is tender, remove from heat and let stand covered 5 minutes, then add juice of 1 lime and cilantro or parsley
