½ cup cream cheese
½ cup shredded sharp Cheddar cheese
12 jalapeno peppers, halved lengthwise, seeds and membranes removed
12 slices bacon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeno half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. Arrange bacon-wrapped peppers on the prepared baking sheet.
  • Bake in the preheated oven until bacon is crispy, about 15 minutes.

Brown Sugar Jalapeño Bacon will be just the heat you need to get going in the morning. Great on sandwiches, too!

1 pound thick sliced bacon
1/3 cup light brown sugar
1/4 teaspoon cinnamon
1-2 medium jalapeños, finely minced

Steps:

  • Preheat the oven to 375°F. Line a baking sheet with foil. Parchment paper also works well. Lay the bacon slices out in a single layer on the prepared baking sheet. Mix together the brown sugar and cinnamon in a bowl. Then work in the diced jalapenos by hand. Rub the bacon with the brown sugar, turn each slice over and run that side too. Bake for 12-15 minutes, depending on how crunchy you like your bacon.  Lay the bacon on parchment paper to cool and drain. It will stick to paper towels!
