My girlfriend gave me this delicious recipe years ago. I’ve made it ever since for family and friends, and they all love it. My daughter loves to take leftovers to school for lunch the next day. —Marie Wielgus, Wayne, New Jersey

1 pound lean ground beef (90% lean)
1 small green pepper, chopped
1/4 cup chopped onion
1 can (8 ounces) tomato sauce
1/2 cup sliced pimiento-stuffed olives
1/4 cup raisins
1 tablespoon cider vinegar
2 cups hot cooked rice
Fresh cilantro leaves, optional

Steps:

  • In a large skillet, cook beef with pepper and onion over medium-high heat until no longer pink, 5-7 minutes; crumble beef. Stir in tomato sauce, olives, raisins and vinegar; bring to a boil. Reduce heat; simmer, uncovered, until raisins are softened, 5-6 minutes., Serve with rice. If desired, top with fresh cilantro to serve.

This easy french toast casserole is a rich and decadent addition to any breakfast or brunch table. If you don't want to use the orange liqueur, you can substitute 1 to 2 teaspoons of orange juice.

Yield 6 servings

Number Of Ingredients 14

? cup packed dark brown sugar
2 tablespoons butter
2 tablespoons dark corn syrup
Cooking spray
1?½ cups 1% low-fat milk
½ cup egg substitute
1 teaspoon vanilla extract
¼ teaspoon salt
? teaspoon grated orange rind
2 large eggs
6 (1 1/2-inch-thick) slices French bread
6 tablespoons frozen fat-free whipped topping, thawed
1 to 2 teaspoons Grand Marnier (orange-flavored liqueur)
2 tablespoons finely chopped pecans, toasted

Steps:

  • Combine first 3 ingredients in a small, heavy saucepan over medium heat. Cook 5 minutes or until bubbly and sugar dissolves, stirring constantly. Pour sugar mixture into bottom of a 13 x 9-inch baking dish coated with cooking spray. Spread mixture evenly over bottom of pan. Set aside; cool completely.
  • Combine milk and next 5 ingredients (through eggs) in a large shallow bowl; stir with a whisk. Dip 1 bread slice in milk mixture; arrange bread slice over sugar mixture in dish. Repeat procedure with remaining 5 bread slices. Pour any remaining egg mixture over bread slices. Cover and refrigerate overnight.
  • Preheat oven to 350°.
  • Bake at 350° for 30 minutes or until lightly browned.
  • While casserole bakes, combine whipped topping and Grand Marnier. Place 1 bread slice, caramel side up, on each of 6 plates; top each serving with 1 tablespoon topping and 1 teaspoon pecans.

Picadillo is one of the great dishes of the Cuban diaspora: a soft, fragrant stew of ground beef and tomatoes, with raisins added for sweetness and olives for salt. Versions of it exist across the Caribbean and into Latin America. This one, based loosely on a recipe that Nitza Villapol published in her cookbook “Cocina Criolla,” in 1954, and helped immeasurably by the advice of the Cuban-American food writer Betty Cortina, combines ground beef with intensely seasoned dried Spanish chorizo in a sofrito of onions, garlic and tomatoes, and scents it with red-wine vinegar, cinnamon and cumin, along with bay leaves and pinches of ground cloves and nutmeg. “Everyone who is of Cuban descent has a recipe for it,” Ms. Cortina said, “and each one of those is the most authentic. It’s a comfort food, probably the most consummate example of one in Cuban cuisine.”
