1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon garlic salt
1 teaspoon dried parsley
1 teaspoon dried marjoram
1 cup red wine
4 stalks celery, cut in half
1 onion, quartered
1 (4 pound) whole chicken

Steps:

  • Preheat an oven to 250 degrees F (120 degrees C). Combine the paprika, black pepper, garlic salt, parsley, and marjoram in a small bowl. Pour the red wine into a roasting pan with lid; set aside.
  • Place the celery and quartered onions into the cavity of the chicken. Rub the chicken with the reserved spice mixture, and set into the roasting pan.
  • Cover, and bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, 4 to 5 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the pan, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before serving.

A great meal to put into the oven and forget about it. The long, slow, low temperature roast makes the chicken not only juicy and tender, but your house will smell wonderful. I often put this chicken in the oven before we go to Sunday School and by the time we are home from Church all I have to do is get my sides ready.

1 teaspoon(s) lowery's seasoned black pepper
1 teaspoon(s) kosher salt
1 teaspoon(s) garlic powder with parsley
1 teaspoon(s) parsley flakes
1 teaspoon(s) thyme, dried
3 tablespoon(s) olive oil, extra virgin
1 large onion, peeled and quartered
3 - celery ribs, quartered
4 pound(s) whole chicken

Steps:

  • Preheat an oven to 250-degrees.
  • Combine the paprika, black pepper, salt, garlic powder, parsley, and thyme in a small bowl with olive oil. Mix well
  • Rub the chicken in side and out with the spice mixture, and set into the roasting pan. Place the celery and quartered onions into the cavity of the chicken.
  • Cover, and bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, 4 to 5 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180- degrees.   • If I have the time or think about it, I marinate the chicken in the spice mixture mixed with olive oil overnight in the refrigerator.
  • I have also substituted lemon juice for the olive oil and added a cut lemon to the cavity of the chicken before roasting that is a tasty and lower fat way to prepare this chicken.

Flip the chicken breast-side up, and then press down on the breasts until bones crack and the bird lays flat. 2. Salt & Air-chill: Rub salt evenly into the meat under the skin. The salt penetrates deeply into the meat and seasons the chicken over several hours, as with a wet brine. The advantage here: The chicken isn't underwater, so the skin dries as it chills, making it easier to brown and crisp in a pan later. 3. Roast Low & Slow: Roasting at 200°F keeps the meat from seizing up and squeezing out lots of juice, a risk you run with high oven temps. The chicken's temperature rises slowly, so you're less likely to overcook it. And roasting it skin-side up dries the skin even more before the pan-browning. 4. Brown & Crisp: Unlike with whole chickens, it's easy to sear the skin on a spatchcocked bird. Just a few minutes sizzling in a hot pan will yield crunchy, golden skin without overcooking the meat.
