This simple roast solves three dilemmas: 1) you're nervous to cook a big hunk of meat 2) you want to impress on a budget and 3) your time is limited and precious. Whether this is your first holiday as host or you just don't want to stress about the main course, consider this dish a meat, sauce and side -- all in one!

2 tablespoons Dijon mustard
1 tablespoon fresh thyme leaves, chopped
One 3- to 3 1/2-pound boneless pork loin roast (remove the string if your roast has been tied)
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
2 medium red onions, each cut through the core into 8 intact wedges
2 cups hard apple cider
One 7-ounce bag mixed dried fruit or 1/4 cup each dried apples, dried apricots, dried pears, prunes and golden raisins

Steps:

  • Preheat the oven to 400 degrees F. Stir together the mustard and thyme in a small bowl. Season the pork roast all over with a generous amount of salt and pepper, then rub the top with the mustard-thyme mixture (leave the bottom and sides bare).
  • Heat the oil in a large, ovenproof skillet over medium-high heat. Add the onions and cook, undisturbed, until dark golden brown in spots, about 2 minutes. Turn the onion wedges over and cook for 2 minutes more. Pour in the cider, stirring to scrape up any bits stuck to the bottom of the skillet. Scatter the dried fruit evenly in the skillet and remove from the heat.
  • Put the roast in the skillet mustard-side up, then bake until an instant-read thermometer inserted in the middle of the roast reads 145 to 150 degrees F, about 1 hour (the roast will continue cooking once you remove it from the oven). Transfer the roast to a cutting board, tent with foil and let rest for 15 minutes. 
  • Cut the roast into 1/2-inch-thick slices. Season the pan sauce, onions and dried fruit with salt and pepper and serve with the pork.

I love this easy weeknight dinner recipe for how to make pork loin filet in the pressure cooker. So fun to make and super flavorful!

Number Of Ingredients 7

1 Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet (approx 2.5 lbs.)
4-6 large carrots, cleaned and cut unto thirds
6 small-medium yellow potatoes, cleaned and cut into fourths
3 pears, cleaned and roughly chopped
1 medium onion, diced
1 cup chicken broth
salt and pepper (optional)

Steps:

  • To the base of your electric pressure cooker, add the pork loin filet. I cut ours in half so it would fit perfectly in the base.
  • Add in the onions, carrots, pears, and potatoes.
  • Pour the chicken broth over top.
  • Pop the lid on and ensure the steam valve is closed.
  • This will hold in all of the steam and pressure to cook the food quickly.
  • Set the timer to 30 minutes and press start.
  • Enjoy your home as the smell of dinner fills your home. All of these flavors smell just like fall and comfort food!
  • Set the table for a cozy dinner- wild flowers and a candle. Have the kiddos set the table.
  • When the food is done and the timer goes off, carefully open the vent to quick release. Let all of the pressure and steam release. This will take 1-2 minutes.
  • Now, you can remove the lid. Now you can plate it up.

    1. To make a rub, bash all the spices together with a good pinch of sea salt and black pepper in a pestle and mortar till fine (or use a blender). Muddle in 2 tablespoons of olive oil.
    2. Trim the fat off the pork, then rub the spice mix over the pork and marinate for 1 hour.
    3. Light your barbecue and let it calm down. Make sure you’ve got your coals high on one side and low on the other for control.
    4. Grill the pork for 5 to 10 minutes, using tongs to turn it till charred all over. Fat will render out, so keep it moving to avoid any flames.
    5. Once it’s looking beautiful, move it to the cool side of the barbecue, cover with tin foil and cook for 45 to 60 minutes, turning every 5 to 10 minutes – you should get gnarly pork that’s beautifully cooked. Check it by cutting in half and looking, or use a meat thermometer and stop when it reaches 72ºC inside – you don’t want it pink but please don’t cook the hell out of it either.
    6. Meanwhile, for the sauce, mix all the ingredients together. Taste it, and tweak the flavours until it tastes right for you. Whatever vibe you’re going for, you want to go slightly too far as it will mellow when it cooks. You don’t have to, but it’s nice to put it on the heat for a couple of minutes to help it along.
    7. For the salad, pick and finely slice all the herbs. Scrub the beetroot and shred the cabbage. Finely slice the chillies (if using).
    8. Add the herbs to a large serving bowl. Thinly slice your beets and apples (core and all), then finely slice into matchsticks (a food processor will do a fine job).
    9. Put these in the bowl, along with the chilli (if using), and add a squeeze of lemon juice.
    10. Just before serving, pour on the extra virgin olive oil, squeeze over the rest of the lemon juice and add a good pinch of pepper. Toss it all together, then have a taste and season to perfection, if needed.
    11. Brush half the sauce all over the pork so it’s shiny and dark, and cook for the final few minutes till it sizzles.
    12. Put it back on the hot side if it needs help to get sticky, but don’t let it burn.
    13. Transfer to a nice board, drizzle over the rest of the sauce and carve at the table, to eat with your lovely salad.
