How to Cook Ribs on Gas Grill - Smoked BBQ Source image

Finger-lickin' low and slow smoked pork ribs using a 3-2-1 method on a gas grill.

1 rack baby back ribs ((at least 2lbs))
? cup dry rub ((Christie Vanover’s Pork Rub))
3 tbsp butter
¼ cup sweet BBQ sauce ((Frank’s Stingin’ Honey Garlic))
¼ cup sweet heat sauce ((Tiger Sauce))

Steps:

  • Prepare gas grill for two zone cooking at 225°F - 250°F.
  • Trim excess fat off ribs and remove any loose bits of meat.
  • Remove the membrane from the back of the ribs.
  • Apply dry rub evenly over both sides of the ribs. Save 2 tbsp of rub for later.
  • Light smoker tube and place on hot zone of grill when steady.
  • Put ribs uncovered on a “cool side” of the grill away from lit burners.
  • After 3 hours, remove the ribs to two layers of foil.
  • Add an even coat of sweet sauce (Frank’s Stingin’ Honey Garlic).
  • Add three tablespoons of butter on top of the meat.
  • Wrap tightly in foil and place back onto grill for another 2 hours.
  • After 2 hours, remove ribs and unwrap. Turn the ribs meat side up and glaze with a sweet heat sauce (Tiger Sauce).
  • Place back onto grill for another hour.
  • An hour later, remove the ribs from the smoker slice in between the bones and enjoy.

4 pounds St. Louis-style pork ribs, cut into 6-inch sections
2 cups barbeque sauce, or to taste

Steps:

  • Heat one side of a gas grill to 300 degrees F (150 degrees C).
  • Fill a small metal can or container with water. Cover with aluminum foil; make several slits in the foil with a knife. Place on the preheated side of the grill.
  • Place ribs bone-side up on the unheated side of the grill; close grill. Cook for 1 1/2 hours. Flip ribs and continue cooking until rib meat shrinks back from the bones, about 1 1/2 hours more.
  • Baste ribs with barbeque sauce. Transfer to the heated side of the grill; cook for 2 minutes with the lid closed. Flip and baste second side with barbeque sauce. Cook for 2 minutes with the lid closed. Flip and baste first side with more barbeque sauce. Cook for 2 minutes with the lid closed.

  • Preheat a grill (charcoal or gas) to 300°, with the coals or flames only under one half of the grill. For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine. Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.  Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180° to 190°, about 80 to 90 minutes. Increase the grill temperature to 375° and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.   Transfer the ribs to a cutting board, cut into pieces and serve.
