2 tablespoons canola or vegetable oil
1 bell pepper, chopped 
1 jalapeno, seeded and chopped 
1/2 yellow onion, chopped 
Kosher salt 
One 1-ounce packet taco seasoning 
2 pounds ground beef 
One 14-ounce can black beans, rinsed and drained 
9 ounces corn kernels (frozen, canned or fresh) 
3 cups mild salsa 
One 9-ounce bag corn chips, such as Fritos 
5 ounces queso fresco, crumbled 
Chopped fresh cilantro, for serving 
Sliced radishes, for serving 
Lime wedges, for serving 
Salsa verde, for serving 

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large skillet, heat the oil over medium-high heat. Add the bell pepper, jalapeno, onion and a pinch of salt and cook until softened, 7 to 10 minutes. Add the taco seasoning and cook for another minute. Add the ground beef and cook, breaking it up with a spoon or spatula, until browned, 8 to 10 minutes. Stir in the beans, corn and mild salsa. Transfer to a casserole dish and cover with the corn chips.
  • Bake until the casserole is heated through and the corn chips are lightly toasted, about 20 minutes. Top with the queso fresco, cilantro, radishes and a squeeze of lime. Serve with salsa verde.

I gal I worked with years ago, brought this to a potluck. Such comfort food! And yes, in Minnesota,, we call it Hotdish!!

Number Of Ingredients 11

1 lb hamburger
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
2/3 cup milk
1 tablespoon butter
12 ounces egg noodles, cooked 5 minutes, and drained
3 cups shredded cheddar cheese
1 (15 ounce) can canned sauerkraut, drained

Steps:

  • Brown hamburger and onion, salt and pepper, drain. Add soups and milk. Stir.
  • Cook noodles, partially, about 5 minutes. They will finish cooking during baking time.
  • Either using a crock-pot(low heat), or a casserole dish, grease with butter, then layer in order, 1/2 of each. Noodles, sauerkraut, hamburger mixture, cheese.
  • Repeat.
  • Either cook in crock-pot on low 4 hours, or bake in a 350 oven, for 45 minutes, until hot and bubbly.

  • Preheat oven to 350°. In a medium skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes. Add ground beef, garlic powder, salt, and pepper and cook until meat is no longer pink, about 6 minutes. Drain any excess grease and pour mixture into a 9"-x-13" baking dish. Combine vegetables in an even layer on top, then cover with soup. Place a layer of tater tots on top. Bake until bubbly and the tots are a warm golden brown, 53 to 55 minutes.

The first hotdish that ever spoke to me was Chinese hotdish, which I found in one of my mother-in-law's church cookbooks. Being Chinese, I knew I had to try it out and recreate it with my own spin. The Chinese hotdishes that I've found in church cookbooks typically consist of ground beef, water chestnuts, rice, canned creamed soup and crispy lo mein noodles on top. My version leans into some of the Chinese ingredients that I've grown up enjoying, with snappy sweet Chinese sausage, black bean garlic sauce which makes the binder explode with flavor, loads of scallions and ginger and rice that takes on a sticky rice texture that makes the whole thing irresistible.
