We know everyone has seen a version of these scrumptious sandwiches floating around the internet. Everyone has their own tweak to the recipe and we loved Rhonda's butter sauce. It was tangy which balances the sweetness of the Hawaiian rolls. We love that you can prep these a day ahead of time and bake right out of the fridge. The sandwiches were toasty and the cheese was fantastically gooey. Sweet and savory, these sliders are buttery perfection. Check out some of our other great pork recipes

2 package(s) Hawaiian sweet dinner rolls (12 per package)
1 package(s) deli sandwich ham, 16 oz.
12 slice(s) Swiss cheese
1/2 cup(s) butter, melted
1 tablespoon(s) poppy seeds
1 1/2 teaspoon(s) Worcestershire sauce
1 1/2 teaspoon(s) brown or Dijon mustard
1 teaspoon(s) onion powder

Steps:

  • Slice top from rolls and place bottoms in baking pan.
  • Layer ham and cheese on rolls.
  • Replace tops.
  • Combine butter, poppy seeds, mustard, Worcestershire, and onion powder in a saucepan. Mix well.
  • Drizzle over rolls. Refrigerate until butter is firm or overnight.
  • Cover with foil.
  • Bake at 350° for 30 minutes or until cheese melts.
  • Uncover and cook for 2 additional minutes.
  • Serve warm or cold.

5 tablespoons cayenne
2 tablespoons dark brown sugar 
1 teaspoon chile powder 
1 teaspoon granulated garlic 
1 teaspoon paprika 
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken thighs 
12 cups vegetable oil 
1 cup buttermilk 
1 tablespoon favorite hot sauce 
2 large eggs 
2 cups all-purpose flour
4 Hawaiian rolls
Butter, for spreading
Dill pickles, for topping
Iceberg lettuce, for topping
Mayonnaise, for spreading 

Steps:

  • In a large heat-resistant bowl, whisk together the cayenne, brown sugar, chile powder, granulated garlic, paprika, 1 tablespoon salt and 1 teaspoon black pepper. Sprinkle the spice mixture on all sides of the chicken. Transfer the chicken to a container and refrigerate at least 1 hour and up to 3 hours. Leave the remaining spice mixture in the bowl.
  • In a large Dutch oven, heat the oil until a deep-fry thermometer inserted in the oil registers 350 degrees F. Position a wire rack on a baking sheet.
  • Whisk together the buttermilk, hot sauce and eggs in a shallow bowl. Put the flour in a second bowl and season with salt and pepper. Dunk the chicken first in the buttermilk mixture, then dredge in the seasoned flour and coat thoroughly. Gently drop the chicken into the oil, in batches if necessary, and fry until golden brown, 10 to 12 minutes. Transfer the cooked chicken to the wire rack.
  • Carefully add about 1 large ladleful (6 to 8 ounces) of the frying oil to the reserved spice mixture to let it bloom. Be careful, as it will bubble aggressively. Whisk until smooth. Brush the fried chicken with the bloomed spiced oil as desired.
  • For the sandwich build: Meanwhile, halve the Hawaiian rolls, spread with butter and toast on a griddle. Put the hot chicken on the griddled buns, top with pickles, lettuce and a schmear of mayo.

Since the meat is loose, the sandwich is always served with a spoon for scooping up the ground beef that will inevitably fall out. When this clone recipe for Maid-Rite was originally posted on our website several years ago, it elicited more e-mail than any recipe in the site's history. Numerous Midwesterners were keyboard-ready to insist that the clone was far from accurate without the inclusion of a few bizarre ingredients, the most common of which was Coca-Cola. One letter states: "You evidently have not ever had a Maid-Rite. The secret to the Maid-Rite is coke syrup. Without it you cannot come close to the taste." Another e-mail reads: "Having lived in the Midwest all of my life and knowing not only the owners of a Maid-Rite restaurant but also many people who worked there, I can tell you that one of the things you left out of your recipe is Coca-Cola. Not a lot, just enough to keep the meat moist." On the flip side, I received comments such as this one from an Iowa fan who lived near Don Taylor's original Maid-Rite franchise: "The secret to the best Maid-Rite is the whole beef.
