These baked salmon cakes are light, healthy and a perfect Holiday appetizer! With wild Alaskan salmon, peppers, capers, breadcrumbs and a zesty avocado dressing.

1/2 pound wild Alaskan salmon filet (fresh or frozen (if frozen thaw overnight in the refrigerator))
olive oil cooking spray
1 tbsp olive oil
Kosher salt and freshly ground black pepper
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (from 1 small pepper)
1/2 cup small-diced yellow bell pepper (from 1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers (drained)
1/4 tablespoon hot sauce
1 1/2 tsp Old Bay seasoning
1 cup seasoned breadcrumbs (or gluten-free crumbs)
3 tablespoon light mayonnaise
3 tablespoon Greek yogurt (0 %)
1 tablespoon Dijon mustard
1 large egg (lightly beaten)
3 large egg whites (lightly beaten)
Zesty avocado cilantro dressing

Steps:

  • Season salmon with salt.
  • Heat a large sauté pan over medium-high heat; when hot lightly spray with oil and add the salmon.
  • Cook until browned on one side, about 4 to 5 minutes then turn and cook an additional 4 to 5 minutes or until salmon easily flakes.
  • Set aside on a dish to cool.
  • Add the olive oil to the pan, then add the the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Old Bay seasoning, 1/2 teaspoon kosher salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 18 to 20 minutes.
  • Set aside to cool to room temperature.
  • Flake the salmon into a large bowl.
  • Add the bread crumbs, mayonnaise, yogurt, mustard, and eggs.
  • Add the vegetable mixture and mix well.
  • Cover and chill in the refrigerator for 30 minutes, this will make them easier to shape and become less sticky.
  • Preheat oven to 400°F.
  • Spray a non-stick baking sheet with cooking spray.
  • Shape the batter into 15 (scant 1/4 cup each) cakes and place on prepared baking sheet.
  • Bake about 10 to 12 minutes on each side, or until golden brown.

Making your own fish cakes is so quick and easy – these ones taste great with tuna, too.

300 g potatoes
100 g salmon fillet skin on, scaled, pin-boned, from sustainable sources
olive oil
a few sprigs of fresh flat-leaf parsley
1 lemon
1 tablespoon plain flour plus extra for dusting

Steps:

    1. Peel the potatoes, cut into 2cm chunks, and cook in boiling salted water for 10 minutes (or use baked potatoes – scoop out the potato and discard the skin).
    2. Rub the salmon fillet all over with 1 teaspoon of oil and a pinch of sea salt and black pepper, then place in a colander and cover with tin foil.
    3. When the time's up on the potatoes, place colander directly over the pan of boiling potatoes. Turn the heat down to medium-low and cook for 8 to 10 minutes, or until the salmon and potatoes are both cooked through.
    4. Meanwhile, pick and finely chop the parsley leaves, discarding the stalks.
    5. Once cooked, remove the fish from the colander to a plate, and discard the skin. Drain the potatoes, and leave to steam dry for 1 minute, then tip back into the pan.
    6. Mash the potatoes, spreading the mash round the sides of the pan to help it cool down quickly. When the potatoes are cooled, transfer to a bowl.
    7. Flake the salmon into the bowl, add 1 tablespoon of flour, the chopped parsley and a really good pinch of sea salt and black pepper. Finely grate over the lemon zest, then mash and mix together really well.
    8. Dust a plate with a little flour. Divide the mixture into 4, then lightly shape and pat into circles about 2cm thick, dusting them with flour as you go. Put them onto a clean plate also dusted with a little flour. If you're going to freeze them, wrap them in clingfilm at this point and put them into the freezer. Otherwise simply pop them into the fridge for an hour before cooking – this will allow them to firm up slightly.
    9. Heat 2 tablespoons of oil in a large frying pan over a medium heat, add the fishcakes and cook for 3 to 4 minutes on each side, or until crisp and golden – you may need to work in batches.
    10. Serve straight away, with veg or salad and lemon wedges for squeezing over.

Call me a bit of a geek, but unwrapping a parcel like this, seeing the steam escape and smelling that punchy homemade basil pesto gets me really excited. Salmon is a great source of vitamin D, which your body needs to absorb calcium to keep your bones and teeth healthy, and cooking it in this way makes it beautifully flaky. I’ve given you more pesto than you’ll need in this recipe, so toss some through cooked pasta or swipe some into a sarnie for tomorrow’s lunch.

    1. Preheat the oven to 200°C/400°F/gas 6. Fill and boil the kettle.
    2. Place a frying pan over a medium heat and toast the pine nuts for 2 to 3 minutes, or until very lightly golden – keep them moving so they don’t burn. Tip into a bowl and set aside.
    3. Pick the basil leaves, discarding the stalks, and pound in a pestle and mortar. If you don’t have a pestle and mortar, very finely chop.
    4. Peel the garlic and add to the mortar with a pinch of sea salt and the toasted pine nuts – keep pounding until you have a green paste. Alternatively, very finely chop it all together on a large board, then place into a bowl.
    5. Squeeze in the juice from half a lemon and finely grate in the Parmesan.
    6. Add 1 to 2 tablespoons of extra virgin olive oil and muddle together – you need just enough oil to bind the pesto and get it to an oozy consistency.
    7. Trim the stalk-ends from the beans and cook in boiling salted water for 2 minutes, then drain.
    8. Fold just over half a metre of tin foil in half so you have a double layer.
    9. Place half the hot green beans in the middle of the foil.
    10. Lay a salmon fillet on top, skin-side down, and spoon over 1 tablespoon of the basil pesto.
    11. Drizzle with 1 teaspoon of olive oil, a squeeze of lemon juice and season with sea salt and black pepper.
    12. Pull the foil edges together and scrunch them up to seal the parcel.
    13. Repeat steps 8 to 12 to make the remaining parcel, then place them onto a baking tray.
    14. Bake in the hot oven for 15 to 20 minutes, or until the salmon is cooked through and the beans are tender.
    15. While the salmon is cooking, refill and boil the kettle. Cut any larger potatoes in half, place in a small pan, just cover with boiling salted water and cook for 15 minutes, or until tender. Drain and return to the pan to keep warm until ready to serve up.
    16. When the time’s up on the salmon, remove the tray from the oven and leave to stand for 1 minute.
    17. Carefully open each parcel (mind out for the steam!) and cut into each salmon fillet to check they’re cooked, then slide onto the plate and serve with the cooked potatoes.
    18. Cut the remaining lemon into wedges and serve on the side for squeezing over.
