Oven Beef Jerky Recipe | Trisha Yearwood | Food Network image

1/2 cup ketchup
1/2 cup brown sugar 
1/2 cup apple cider vinegar 
2 tablespoons Worcestershire sauce
2 teaspoons kosher salt 
1 teaspoon garlic powder 
1 teaspoon paprika 
1 1/2 pounds top round, top sirloin or similar cut of beef, placed in the freezer for 30 minutes
1 cup soy sauce
1/2 cup brown sugar 
2 tablespoons sriracha 
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder 
1 teaspoon ground ginger 
Juice of 1 lime
1 1/2 pounds top round, top sirloin or similar cut of beef, placed in the freezer for 30 minutes

Steps:

  • For the BBQ jerky: Stir together the ketchup, brown sugar, vinegar, Worcestershire, salt, garlic powder and paprika in a bowl. Thinly slice the frozen beef against the grain. Coat the meat in the mixture. Marinate the meat, refrigerated, for 4 hours or overnight.
  • Preheat the oven to 200 degrees F. Line a baking sheet with foil and set a baking rack on top.
  • Lay the slices of meat flat on the baking rack in a single layer. Bake until the jerky is completely dried, 3 1/2 to 4 hours.
  • For the teriyaki jerky: Stir together the soy, sugar, sriracha, Worcestershire, garlic, ginger and lime juice in a resealable plastic bag. Thinly slice the frozen beef against the grain. Place the meat in the bag and marinate the meat, refrigerated, for 4 hours or overnight.
  • Preheat the oven to 200 degrees F. Line a baking sheet with foil and set a baking rack on top. Lay the slices of meat flat on the baking rack in a single layer. Bake until the jerky is completely dried, 3 1/2 to 4 hours.

This ice tea comes from Trisha Yearwood's book Home Cooking with Trisha Yearwood. It is a "classic Southern cooler." It was also featured in LHJ magazine June 2010. Serve it at bbqs, cook outs, picnics, everyday at home, or keep some in the fridge for when peple pop in. The secret is in the steeping and in the addition of very cold water. 4 large family sized tea bags
6 cups very cold water
1 1/2 cups sugar (adjust to taste)
1 orange, sliced

Steps:

  • Fill a saucepan with enough water to cover tea bags.
  • Bring water to a boil and remove from heat.
  • Let tea steep for 10 minutes in the pan.
  • Pour sugar in a pitcher and add the hot tea, making sure to stir until all sugar dissolves.
  • Finish filling the pitcher with very cold water.
  • Drop orange slices into tea and garnish glasses and pitcher with additional slices.

  • Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer. In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the jelly-roll pan into the oven and bake for 3 to 5 minutes, or until just bubbly, watching carefully. Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife. Transfer the pan to the freezer for 15 to 20 minutes, or until completely cold. They will form one big sheet. Break up into pieces. Store in an airtight container.

  • Heat a large skillet or griddle over medium heat and coat with some of the remaining melted butter. For each pancake, pour about 1/4 cup of the batter into the hot skillet. Cook 3 or 4 pancakes at a time, depending on the size of the skillet. If the batter seems too thick, thin it with 1 to 2 tablespoons milk. When bubbles begin to form and "pop" on the pancake's surface, after about 1 minute, and the outer edge looks done, flip it over and cook briefly for about 30 seconds on the other side.
