A fuss-free and healthy pasta bake that you can make in one dish. It's packed with the flavours and colours of Mediterranean vegetables and topped with pine nuts for crunch. Each serving provides 375 kcal, 12g protein, 27g carbohydrates (of which 11g sugars), 22g fat (of which 5g saturates), 8g fibre and 0.95g salt.

2 tbsp olive oil
1 red onion, roughly chopped
1 yellow or red pepper, deseeded and cut into roughly 1.5cm/⅝in chunks
1 courgette (approx. 225g/8oz), quartered lengthways and cut into roughly 1.5cm/⅝in chunks
1 small aubergine (approx. 250g/9oz), cut into roughly 1.5cm/⅝in chunks
2 large garlic cloves, crushed
4 tbsp sun-dried tomato or red pepper pesto
400g tin chopped tomatoes
100g/3½oz wholewheat penne pasta
75g/2¾oz young spinach leaves, tough stalks removed
50g/1¾oz mature cheddar, grated
2 tbsp pine nuts
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 200C/180 Fan/Gas 6.
  • Heat the oil in a flameproof casserole. Add the onion, pepper, courgette and aubergine, season with a little salt and lots of pepper and fry over a medium heat for about 8 minutes, or until softened and lightly browned, stirring regularly. Add the garlic and cook for 1 minute, then stir in the pesto and cook for 1 minute more, stirring constantly.
  • Tip the tomatoes into the casserole, then fill the tomato tin with water and pour into the pan. Add the pasta and bring to a simmer, stirring regularly. Cover with a lid, or if you prefer tip into a baking dish and cover with foil, and bake for 20 minutes.
  • Take the casserole out of the oven and stir in the spinach, a handful at a time. Once all the spinach has been mixed in, sprinkle the cheese and pine nuts over the top. Return to the oven and cook, uncovered, for a further 10 minutes, until the pasta is tender.

280g penne
280g broccoli, cut into florets
25g butter
25g plain flour
300ml milk
1 tbsp wholegrain mustard
140g mature cheddar, grated

Steps:

  • Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.
  • Heat the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.
  • Mix the pasta and broccoli into the sauce and spoon into an ovenproof dish. Scatter over the remaining cheese and place under a hot grill for 3-4 mins until golden and bubbling.

    1. Recipe kindly shared by the Tesco Community Cookery School with Jamie Oliver. The recipe has been written to be flexible and scalable up to 50 portions. Note: all veg weights are for trimmed, prepped vegetables.
    2. Preheat the oven 180°C/350°F/gas 4.
    3. Break the cauliflower and broccoli into florets.
    4. Cook the pasta in a large pan of boiling salted water according to the packet instructions, adding the cauliflower and broccoli for the last 4 minutes, then drain, reserving a mugful of cooking water.
    5. Remove and discard any tough stalky bits from the leafy greens, then chop into bite-sized pieces.
    6. Place a pan large enough to hold all the ingredients on a medium heat with the olive oil. Add the greens and cook for 3 minutes or until wilted.
    7. Add the white sauce, mustard (if using) and pasta and veg. Grate over the cheese and give everything a good mix, adding a splash of cooking water to loosen. Season to taste.
    8. Transfer to a large, deep baking tray (60x40cm).
    9. Tear the bread (if using) into small chunks and whiz in a food processor to chunky crumbs. Scatter the breadcrumbs over the pasta and season with a little black pepper.
    10. Bake for 10 minutes or until golden and bubbling.
