1 cup cornmeal
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/4 cup sugar
2 eggs
1 cup low-fat buttermilk
1/4 cup yogurt
1 tablespoon olive oil

Steps:

  • Preheat oven to 400°F Grease a 12 cup muffin tin.
  • Whisk together cornmeal, flour, baking soda, baking powder, salt and sugar in a large bowl. Whisk together eggs, buttermilk, yogurt and oil. Pour buttermilk mixture into cornmeal mixture and stir until just combined. Fill each muffin cup 2/3 full with batter.
  • Bake for 15-18 minutes, until tester just comes out clean. Do not overbake!
  • Turn out to cool on a wire rack.
  • Eat with chili or butter and honey. Or both.

1 cup flour
¾ cup cornmeal
¼ cup sugar (see Tip)
2?½ teaspoons baking powder
¾ teaspoon salt
2 eggs, beaten
1 cup fat-free milk
¼ cup vegetable oil or melted butter

Steps:

  • Preheat oven to 400 degrees F. Coat twelve 2 1/2-inch muffin cups with cooking spray. In a medium bowl, combine flour, cornmeal, sugar, baking powder, and salt; set aside.
  • In a small bowl, combine eggs, milk and oil. Add egg mixture all at once to flour mixture. Stir just until moistened. Spoon batter into prepared muffin cups, filling each cup two-thirds full. Bake about 15 minutes or until lightly browned and a toothpick inserted near centers comes out clean. Serve warm.
