I gal I worked with years ago, brought this to a potluck. Such comfort food! And yes, in Minnesota,, we call it Hotdish!!

Number Of Ingredients 11

1 lb hamburger
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
2/3 cup milk
1 tablespoon butter
12 ounces egg noodles, cooked 5 minutes, and drained
3 cups shredded cheddar cheese
1 (15 ounce) can canned sauerkraut, drained

Steps:

  • Brown hamburger and onion, salt and pepper, drain. Add soups and milk. Stir.
  • Cook noodles, partially, about 5 minutes. They will finish cooking during baking time.
  • Either using a crock-pot(low heat), or a casserole dish, grease with butter, then layer in order, 1/2 of each. Noodles, sauerkraut, hamburger mixture, cheese.
  • Repeat.
  • Either cook in crock-pot on low 4 hours, or bake in a 350 oven, for 45 minutes, until hot and bubbly.

100 grams Smoked bacon
2 onions
1 garlic
250 grams Ground meat
2 tablespoons clarified butter
1 splash dry white wine
800 grams Sauerkraut
250 milliliters Beef broth
salt
freshly ground peppers
1 teaspoon ground paprika
1 bay leaf
4 Juniper berries

Steps:

  • Finely dice the bacon. Peel the onion and garlic. Finely dice the garlic, and julienne the onion. Heat bacon in a pan until fat is rendered, then remove with a slotted spoon and drain. Add ground beef to pan and cook until it crumbles easily and is cooked through. Add onion and garlic, sauté briefly, then pour in the white wine. 
  • Add the bacon and drained sauerkraut, and pour in the broth. Add the paprika, and season to taste with salt and pepper. Mix in the bay leaf and crushed juniper berries, cover, and simmer gently for 45 minutes. If the liquid evaporates completely, add a little broth. Adjust the seasoning once the cook time has ended, and serve.

  • In a large skillet, cook beef and onion over medium heat until the meat is no longer pink; drain. Add sauerkraut. Cool for 15 minutes. , Meanwhile, flatten each piece of dough.
