This Ham and Turkey Club Sandwich is piled high with ham, turkey, bacon, lettuce, tomato, and a homemade honey-mustard mayonnaise. It's perfect for lunch, but it's also substantial enough for a quick and easy dinner!

3 slices bread (any kind)
4 slices bacon
1 teaspoon honey
1 teaspoon Dijon mustard
2 tablespoons mayonnaise
2 slices deli oven-roasted turkey breast (or about 1½ ounces total (depending on how thick the slices are))
2 slices deli ham (or about 1½ ounces total (depending on how thick the slices are))
2 large pieces lettuce (I use Romaine or iceberg)
4 large slices tomato
salt and pepper (to taste)

Steps:

  • Lightly toast the bread and let it cool while you prepare the other ingredients. You want the bread to be semi-soft here. If the bread is too crisp and dry, you risk the sandwich falling apart when you bite into it. Allowing the bread to cool off will prevent the lettuce from wilting.
  • Cook the bacon according to the package directions by whichever method you prefer; drain on a plate lined with paper towels.
  • In a small bowl, stir together the honey, mustard, and mayonnaise until well-combined.
  • Spread the honey-mustard mayonnaise evenly on the three slices of bread.
  • Take one of the pieces of bread, mayonnaise side up, and top it in this order: turkey (fold in half, if needed, to fit), one piece of lettuce, two slices of tomato, salt and pepper, 2 pieces of bacon (broken in half, if needed, to fit).
  • Top with another piece of bread, mayonnaise side up, and top it in this order: ham (fold in half, if needed, to fit), one piece of lettuce, two slices of tomato, salt and pepper, 2 pieces of bacon (broken in half, if needed, to fit).
  • Top with the third piece of bread, mayonnaise side down. Cut the sandwich into quarters. To make cutting the sandwich easier and to keep the quarters together, you can use toothpicks. Put one in the middle of each corner of the sandwich and cut. I usually remove the toothpicks after cutting. If you serve the club with toothpicks and you don't have any of those extra-long, colored-frilly-top ones, just be sure to tell whoever you're serving the sandwich to that there are toothpicks in there (they can be hard to see).
  • Serve immediately.
