Steps:
- Saute onions and mushrooms in cooking oil in large saucepan on medium for about 5 minutes until onion is soft.
- Add remaining 10 ingredients. Bring to a boil on medium-high.
- Reduce heat. Cover.
- Simmer for 20 minutes, stirring occasionally.

- Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
- Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
- Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

If using uncooked bacon heat a tablespoon of oil in a large frying pan over a medium heat. Add the bacon and cook for 2-3 minutes. Add the mushrooms, thyme leaves and garlic. Sauté for 5-6 minutes until the mushrooms are golden.
Meanwhile cook the pasta as per packet instructions.
While the pasta is cooking mix together the egg yolks, cream and cheese in a bowl.
Drain the pasta, reserving about 120ml of the liquid. With the saucepan off the heat, return the pasta to it along with the reserved water, bacon/cooked ham and egg, cream and cheese mixture.
Return to a very low heat and stir constantly for a minute or two until the sauce thickens. Taste and season if necessary.
Divide between four bowls and sprinkle over some thyme leaves and more cheese if you wish.
