2 0.75-1 pounds pork tenderloins
3 tablespoons soy sauce
2 tablespoons lime juice
2 tablespoons orange juice
2 tablespoons cooking oil
½ teaspoon dry mustard
¼ teaspoon garlic powder
1 fresh medium pineapple, peeled, cored, and cut crosswise into 8 slices

Steps:

  • Trim fat from pork, if necessary; place pork in a self-sealing plastic bag set in a shallow dish. For marinade, combine soy sauce, lime juice, orange juice, oil, mustard, and garlic powder. Pour marinade over pork in bag. Seal bag. Marinate in refrigerator for at least 8 hours or up to 24 hours, turning bag occasionally.
  • Drain, reserving marinade. In a grill with a cover, arrange medium-hot coals around a drip pan*. Test for medium heat above pan. Place pork on grill rack over drip pan. Cover and grill for 30 to 45 minutes or until meat is slightly pink in center (meat thermometer registers 160 degrees F) and juices run clear. Brush occasionally with marinade during the first 20 minutes of grilling. Discard remaining marinade. Add pineapple slices to grill directly over coals for the last 5 minutes of grilling; turn slices once. Makes 8 servings.

1 cup unsweetened pineapple juice
1/4 cup minced fresh gingerroot
1/4 cup reduced-sodium soy sauce
4 garlic cloves, minced
1 teaspoon ground mustard
2 pork tenderloins (3/4 pound each)
1 fresh pineapple, cut into 12 slices

Steps:

  • In a small bowl, combine the first five ingredients. Pour 2/3 cup marinade into a large resealable plastic bag. Add the pork; seal bag and turn to coat. Refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade., Drain and discard marinade. Lightly grease the grill rack., Prepare grill for indirect heat, using a drip pan. Place pork over drip pan and grill, covered, over indirect medium heat for 25-30 minutes or until a thermometer reads 160°, basting occasionally with reserved marinade. Let stand for 5 minutes before slicing., Meanwhile, grill pineapple slices for 2-3 minutes on each side or until heated through; serve with pork.
