One-Pot Greek Pasta Recipe | EatingWell image

A little bit of Sunday meal prep goes a long way in this one-dish Mediterranean pasta recipe. The pasta is cooked ahead of time and stored in the fridge to use for meals all week, but any leftover cooked pasta you have on hand will do. Chicken sausage with feta is especially good in this recipe.

2 tablespoons olive oil
3 links cooked chicken sausage (9 ounces), sliced into rounds
1 cup diced onion (see Tip)
1 clove garlic, minced
1 (8 ounce) can no-salt-added tomato sauce
4 cups lightly packed baby spinach (half of a 5-ounce box)
6 cups cooked whole-wheat rotini pasta
¼ cup chopped pitted Kalamata olives
½ cup finely crumbled feta cheese
¼ cup chopped fresh basil

Steps:

  • Heat oil in a large straight-sided skillet over medium-high heat. Add sausage, onion and garlic; cook, stirring often, until the onion is starting to brown, 4 to 6 minutes. Add tomato sauce, spinach, pasta and olives; cook, stirring often, until bubbling hot and the spinach is wilted, 3 to 5 minutes. Add 1 to 2 tablespoons water, if necessary, to keep the pasta from sticking. Stir in feta and basil, if using.

I have been trying to duplicate the Greek Pasta from Zio's Italian Restaurant for a couple years. I finally got the seasoning right, and my family gave me a 'thumbs up'! Now it is one of our favorites.

Prep Time 15 minutes

Cook Time 25 minutes

Yield 6-8 serving(s)

Number Of Ingredients 11

3 chicken breasts, grilled and diced
1 lb penne pasta
8 ounces feta cheese
2 -3 teaspoons all purpose Greek seasoning
1 (15 ounce) can diced tomatoes, drained
1/2 cup olive oil
10 garlic cloves, diced
1 onion, chopped
1 green bell pepper, diced
6 ounces kalamata olives (optional)
1/2 teaspoon red pepper flakes

Steps:

  • Cook pasta according to directions on the box.
  • While the pasta is cooking, grill chicken seasoned w/some of the Greek Seasoning.
  • Saute garlic, onion, green pepper and red pepper flakes in oil.
  • Toss pasta, chicken, sauteed vegetables, tomatoes and Feta together along with the Greek Seasoning. Enjoy!

  • In a large pot of salted boiling water, cook pasta according to package instructions. Drain  and set aside.  Meanwhile, in a large skillet over medium heat, heat oil. Season chicken with salt, pepper, and oregano then add to skillet. Cook until chicken is golden and cooked through, about 8 minutes per side. Remove from chicken from skillet and let rest for 5 minutes. To the same skillet, heat remaining oil. Stir in garlic and cook until fragrant, about 1 minute. Add half and half, cream cheese, and crumbled feta, and cook, stirring occasionally, until cheeses have melted. Stir in lemon juice and zest then season with salt and pepper to taste. Cut chicken into 2" pieces then add to skillet with cooked pasta, cherry tomatoes, olives, cucumber, and dill. Toss until evenly combined. Garnish with parsley before serving.
