Coconut oil is hard, when its just cooler than room temperature, and its not even a little soft like shortening, its really hard! It melts at your touch but still its hard to get to measure it. Melting it is one way, but if your using in place of cold butter in baking- that's a wasted step and a pain :) Here's a better idea as taught to me in 7th grade Home-Ec, this applies to shortening, tub margarine, anything that is a greasy and waxy solid. The best Corned Beef I've ever made was in the Crock pot. (You can substitute water for beer, but the flavor won't be the same) NOTE: If you make more than 3-4 lbs., cook it on HIGH. I've made 6-7 lbs., and it won't be done after 9 hours on LOW. ANOTHER NOTE: This makes wonderful sandwiches if you cook it, then chill it before slicing.
