1 lb 93% lean ground beef (or chicken, or turkey)
1/2 cup crushed Schar Crackers
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 tablespoons dried parsley
1 egg

Steps:

  • Preheat your oven to 375°F.
  • Line a 13x9-inch baking sheet with parchment paper; set aside.
  • In large bowl, mix all ingredients. Shape meatball mixture into 24 (1 1/2-inch) meatballs. Place meatballs 1 inch apart on your baking sheet.
  • Bake uncovered for 18 minutes or until the internal temperature reaches 160°F.
  • Serve warm.

This gluten-free meatball recipe is easy to make. My kids loved them. (They couldn't tell the difference.) They are a fine substitute for those who cannot eat gluten. Use them in spaghetti or in meatball sandwiches (my kids' favorite).

2 pounds lean ground beef
3 eggs
½ cup gluten-free bread crumbs
¼ cup dried onion flakes
¼ cup Parmesan cheese
1 tablespoon Italian seasoning, or more to taste
3 tablespoons olive oil
2 (24 ounce) jars spaghetti sauce

Steps:

  • Combine ground beef, eggs, bread crumbs, onion flakes, Parmesan cheese, and Italian seasoning in a large bowl. Mix well. Shape mixture into 4 to 5 dozen meatballs by hand or with a small scoop.
  • Heat olive oil in a deep skillet over medium heat. Cook meatballs in batches until browned, about 3 minutes per side. Drain off excess grease if needed. Return all cooked meatballs to the pan and add spaghetti sauce. Reduce heat and simmer until meatballs are no longer pink on the insides, about 20 minutes.
