Canning Tomatillos ~ Homemade Whole Canned Tomatillos image

Simple canned whole tomatillos are versatile in recipes, and can be quickly put up using a water bath canner.

9 lbs Tomatillos, fresh
bottled lemon juice, see notes
boiling water

Steps:

  • Remove the papery outer husks from the tomatillos and pierce each one with a needle or fork (optional).
  • Simmer tomatillos in boiling water for about 5 minutes, until they lose their bright green color.
  • Add one tablespoon of lemon juice to each pint canning jar (or 2 tbsp for quarts).  Pack whole tomatillos into canning jars and cover with boiling water, leaving 1/2 inch headspace.
  • Seal with 2 part lids and process in a water bath canner for 40 minutes (pints) or 45 minutes (quarts) adjusting for altitude.
  • If you prefer, tomatillos can be pressure canned at 10 pounds pressure for 10 minutes instead, but pressure canning is not strictly required as they are a high acid food.

4 medium white onions (cut into wedges)
4 jalapeño chiles (or serrano peppers)
6 cloves garlic (peeled)
1 cup fresh lime juice (or bottled lime juice)
1/2 cup chopped fresh cilantro leaves
2 teaspoons kosher salt ((optional for flavor))
1 teaspoon black pepper ((optional for flavor))
1/2 teaspoon ground cumin ((optional for flavor))

Combine all ingredients in a large stockpot and bring to a simmer on the stove.  Simmer for 20 minutes to an hour to allow the tomatillos to break down and flavors to meld.  Taste and adjust salt accordingly. 2. Ladle sauce into prepared pint mason jars leaving 1/2 inch headspace, and process in a water bath canner for 15 minutes for pints. (Adjust for altitude) 3. Remove from the canner and allow to cool at room temperature before checking seals to make sure all jars have properly sealed.  Place any unsealed jars in the refrigerator for immediate use.
