Nonstick cooking spray
1 cup butter
1 cup packed brown sugar
½ cup granulated sugar
½ teaspoon salt
? cup milk
1 teaspoon vanilla
2?½ cups pasteurized all-purpose flour* or oat flour
1 cup miniature semisweet chocolate chips
1 4 ounce bar semisweet chocolate, chopped
2 tablespoons heavy cream
2 teaspoons light corn syrup
Sea salt flakes

Steps:

  • Lightly coat a 13x9-inch baking pan with cooking spray. In a 10-inch skillet heat butter over medium 5 minutes or until butter turns golden brown. Immediately remove from heat. Pour into a large bowl; cool to room temperature.
  • Add both sugars and salt. Beat with a mixer until combined, 1 to 2 minutes, scraping bowl as needed. Beat in milk and vanilla. Beat in flour. Stir in chocolate chips.
  • Transfer dough to prepared pan and pat into an even layer. Cover and chill while preparing ganache.
  • For ganache, in a small saucepan combine chopped chocolate, cream, and corn syrup. Heat and stir over low until melted and smooth. Pour ganache over cookie dough; spread evenly. Sprinkle with sea salt. Chill 1 hour or until ganache is set. Cut into bars.

Christmas cookies are always a favorite with Southern Living readers, so it is little wonder that this recipe for Basic Butter Cookie dough became a holiday favorite. Ellender Mills of Raleigh, North Carolina, sent in this recipe, which ran in December, 1995, and described how she divided the dough into quarters, adding different flavorings, frostings, and garnishes to each quarter to create a wonderful assortment of Christmas cookies. You can make four varieties of cookies from one recipe, and we give you the recipes for Easy Santa Cookies, Pinwheels, Cherry Chocolates, or Almond Brickle Treats. Make one batch of Basic Butter Cookie Dough and divide it into fourths, using one fourth of the dough for each separate cookie recipe. Freeze any unused dough to use later. This Basic Butter Cookie Dough alone bakes up a delicious cookie, perfect for an afternoon coffee break. Combined with the four variations, you have all you need to create a fabulous Christmas cookie platter that is sure to please your family, friends, and even Old Saint Nick.

2 cups butter or margarine, softened
1 cup firmly packed brown sugar
1 cup sugar
2 large eggs
7 1/2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/4 cup milk
1 teaspoon vanilla extract

Steps:

  • Beat butter at medium speed with an electric mixer until fluffy; gradually add sugars, beating well. Add eggs, one at a time, beating after each addition.
  • Combine flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed after each addition until mixture is blended. Stir in vanilla.
  • Divide dough into 4 equal portions; wrap each portion in plastic wrap to prevent drying out. Chill. Proceed with cookie instructions of choice.
  • Shape the dough into 1-inch balls, and place on lightly greased cookie sheets. Dip a flat-bottomed glass into sugar, and flatten balls to 1/4-inch thickness. Bake at 350° for 10 minutes or until lightly browned. Remove to wire racks to cool.

Ingredients
  • 300 g all-purpose flour
  • 150 g cow milk butter
  • 130 g brown sugar
  • 100 g ION PATISSERIE classic couverture
  • 90 g sugar
  • 2 medium eggs
  • 1 teaspoon honey
  • 1/2 teaspoon soda
  • zest of 1 orange
For the filling
  • ION NUCREMA hazelnut praline
Method Line a plate with parchment paper. Then, scoop 8 teaspoons of hazelnut praline and place them on the parchment paper side to side. Put in the freezer for half an hour. In a mixer's bowl, add the butter, brown and granulated sugar, and honey, and beat at medium speed, using the paddle attachment. Beat well, until light and fluffy. Right after, whisk the eggs and add them to the mixture. Keep beating until completely homogenized. Afterwards, stop beating, and add the flour, soda, orange zest, and the finely chopped couverture. Then, continue beating at medium speed for 1 more minute, until the mixture turns into a dough. Finally, cover the dough with plastic wrap, and refrigerate for at least half an hour. When the dough is cool enough, shape it into balls of 50 g each. Right after, press down on the center of each ball to flatten it out, making sure they are not less than 1 cm thick. Next, take a flat piece of dough and place at the center one teaspoon of frozen praline. Then, carefully place on top another flat piece of dough. Press down on the edges of the dough, creating a large cookie. Follow the same process with the rest of the dough, and transfer them to a lined baking pan with parchment paper. Make sure to leave enough space between the cookies, because they will spread while baking. Finally, bake in a preheated oven, on the middle oven rack, at 180 C fan, for approximately 10-12 minutes.
