Lemon Blueberry Waffles {Fresh or Frozen Berries) - CakeWhiz image

The best quick and easy blueberry waffles recipe, homemade with simple ingredients. Crispy on the outside, fluffy on the inside. Full of blueberries (fresh or frozen), lemon and vanilla.

Number Of Ingredients 10

2 cups All-purpose flour
1 tbsp Baking powder
2 tbsp Granulated sugar
2 Eggs (Large)
6 tbsp Butter (Unsalted, Melted but not hot)
1.5 cups Milk (Whole or 2%)
1 tsp Vanilla extract
1 tsp Lemon extract
2 tsp Lemon zest
3/4 cup Blueberries (Preferably fresh but frozen can be used if thawed and gently blotted dry with paper towels)

Steps:

  • In a large mixing bowl, whisk together flour, baking powder, sugar until combined.
  • Add eggs, butter, milk, vanilla extract, lemon extract, lemon zest and mix until just combined. Don't over-mix! There will be some lumps.
  • Gently fold in the blueberries.
  • Spray waffle maker with nonstick cooking spray.
  • Pour batter in waffle iron. The amount of batter should be determined, based on your waffle iron instructions. 
  • Close and cook for about 4 minutes or until waffles are golden brown and slightly crispy along the edges. Cook time will vary, based on your waffle iron instructions.
  • Remove waffles from waffle iron onto a plate.
  • Sprinkle some more blueberries on top along with some maple syrup. Enjoy!

These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

1 cup blueberries
3 teaspoons baking powder
2 eggs, separated
1 tablespoon sugar
2 cups sifted flour
1 1/2 cups milk
1/2 teaspoon salt
1/4 cup melted butter

Steps:

  • Preheat the waffle iron.
  • Beat egg whites til stiff and set aside.
  • Sift together dry ingredients.
  • Slowly stir in milk, beaten egg yolks and melted butter.
  • Fold in blueberries.
  • Fold in egg whites which were stiffly beaten.
  • Bake in hot waffle iron.
