Homemade pizza dough recipe | Jamie Oliver recipes image

Once you've tried this easy pizza dough recipe, you'll never look back (trust me)

Total Time 20 minutes

Yield 8 medium-sized thin bases

Number Of Ingredients 5

1 kg white bread flour or Tipo '00' flour or 800g strong white bread flour or Tipo '00' flour, plus 200g finely ground semolina flour
1 teaspoon fine sea salt
2 x 7 g dried yeast sachets
1 tablespoon golden caster sugar
4 tablespoons extra virgin olive oil

Steps:

    1. Sieve the flour/s and salt on to a clean work surface and make a well in the middle.
    2. In a jug, mix the yeast, sugar and oil into 650ml of lukewarm water and leave for a few minutes, then pour into the well.
    3. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.
    4. Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.
    5. Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands – this is called knocking back the dough. You can either use it immediately, or keep it, wrapped in clingfilm, in the fridge (or freezer) until required.
    6. If using straight away, divide the dough up into as many little balls as you want to make pizzas – this amount of dough is enough to make about six to eight medium pizzas.
    7. Timing-wise, it’s a good idea to roll the pizzas out about 15 to 20 minutes before you want to cook them. Don’t roll them out and leave them hanging around for a few hours, though – if you are working in advance like this it’s better to leave your dough, covered with clingfilm, in the fridge. However, if you want to get them rolled out so there’s one less thing to do when your guests are round, simply roll the dough out into rough circles, about 0.5cm thick, and place them on slightly larger pieces of olive-oil-rubbed and flour-dusted tin foil. You can then stack the pizzas, cover them with clingfilm, and pop them into the fridge.

1 1/4 cups finely ground almond flour (5 ounces)
1/4 teaspoon baking powder
1/4 teaspoon active dry yeast (optional)
Large pinch garlic powder
Kosher salt
1 large egg
1 tablespoon extra-virgin olive oil
1/2 cup prepared pizza sauce
1 cup shredded low-moisture mozzarella cheese
1/4 cup sliced pepperoni (about 1 1/2 ounces)
Fresh basil leaves, for garnish (optional)

Steps:

  • Arrange a rack in the middle of the oven and heat the oven to 450°F.
  • Place 1 1/4 cups almond flour, 1/4 teaspoon baking powder, 1/4 teaspoon active dry yeast if using, a large pinch of garlic powder, and a pinch of kosher salt in a medium bowl and whisk until well combined. Using a spoon, make a well in the center of the dry mixture. Add 1 large egg and 1 tablespoon extra-virgin olive oil into the well.
  • Stir the egg and oil, breaking the egg up and slowly letting the dry ingredients incorporate into the wet. Using your hands, knead the dough a few times to bring it together and make sure everything is combined. Gather the dough into a flat disc.
  • Roll the dough out between 2 large sheets of parchment paper into a 10-inch circle, using a bench scraper or the side of the knife to push in any frayed edges while rolling for a more even circle.
  • Remove and discard the top sheet of parchment. Slide the crust, still on the bottom parchment, onto onto a baking sheet. Bake until the dough is just set, about 7 minutes.
  • Remove the baking sheet from the oven. Spread 1/2 cup pizza sauce onto the crust, leaving a little more than a 1/2-inch border on the edges. Sprinkle with 1 cup shredded mozzarella cheese, then top with 1/4 cup pepperoni slices. Return to the oven and bake until the crust is golden and crisp and the cheese is bubbly and golden in places, 12 to 15 minutes more. Tear fresh basil leaves over the pizza, if desired.

Mix in the yeast and leave for 2 minutes. Gradually mix in 90% of the remaining flour until you have a pliable, soft dough. Tip the remaining flour on to a clean surface and knead the dough for 20 minutes, or until smooth and elastic (or 10 minutes in a free-standing mixer with a dough hook). Place in a floured bowl, cover with a clean damp tea towel and prove for 1 hour, or until doubled in size. Knock out the air with your fists, roll into a sausage shape, chop into 6 equal pieces and roll each one into a ball, stretching the edges underneath. Place on an oiled tray, drizzle with oil, cover with clingfilm and the tea towel and prove overnight in the fridge (for better flavour and a more relaxed dough). Preheat the oven to full whack (240ºC/475ºF/gas 9) and place a pizza stone inside. Use a fish slice to move one ball of dough on to a flour-dusted surface. Press the ball out into a fat round disc, then pick it up and gently turn and stretch it to 30cm in diameter, using gravity to help you. Stretch it over the back of your fists, then place on a floured pizza paddle or board – the dough should be a little thicker around the edges. Pull it into shape and give it a jiggle so you know it’s free-moving. Working quickly and with restraint, add your chosen toppings. Quickly shunt on to your pizza stone and close the oven door to retain heat. Wait 7 or 8 minutes and it’ll be golden, crisp and ready to eat.
