1/4 c. extra-virgin olive oil
Juice of 2 limes
1 tsp. garlic powder
1 tsp. ground cumin
1/2 tsp. smoked paprika
3 lb. chicken wings
kosher salt
Freshly ground black pepper
4 tbsp. butter
2 tbsp. honey
1 tbsp. Hot sauce
Juice of 1 lime
2 tbsp. Chopped cilantro

Steps:

  • In a large bowl, whisk together olive oil, lime juice, garlic powder, cumin, and paprika. Add wings and toss until coated. Cover bowl tightly with plastic wrap and refrigerate for at least 1 hour and up to 4 hours. Drain wings and pat dry.
  • Preheat oven to 425° and line a large rimmed baking sheet with a metal rack. Season wings with salt and pepper. Bake until crispy, about 50 minutes.
  • Meanwhile, make glaze: In a small saucepan over medium heat, melt butter. Whisk in honey, hot sauce, and lime juice. Turn off heat then stir in cilantro.
  • Transfer baked wings to a clean large bowl. Pour sauce over wings then use tongs to toss wings until fully coated.
  • Serve warm.

8 boneless skinless chicken breast halves (4 ounces each)
1/2 cup lime juice
1/3 cup olive oil
4 green onions, chopped
4 garlic cloves, minced
3 tablespoons chopped fresh dill, divided
1/4 teaspoon pepper

Steps:

  • Place chicken in a shallow dish. Combine the lime juice, oil, onions, garlic, 2 tablespoons dill and pepper; pour over chicken and turn to coat. Refrigerate, covered, 2-4 hours. , Drain chicken, discarding marinade. Grill chicken, covered, over medium-hot heat for 3-4 minutes on each side, or until a thermometer reads 165°. Sprinkle with remaining 1 tablespoon dill.
