Steps:
- Place potatoes in large pan with water over high heat and boil until tender but still firm, about 15–20 minutes. Heat butter and half-and-half in saucepan over low heat until combined. Drain potatoes and place in mixer with butter sauce. Add dressing mix and process until smooth. Season with salt and pepper.

Steps:
Preheat oven to 400°F. Spray a baking pan with cooking spray.
Spread potatoes on the baking pan. Spray with the cooking spray and add salt and pepper, to taste. Cover with foil and bake for 40 minutes.
When finished, remove from oven and pour potatoes into a greased casserole dish. Add cheese, crumbled bacon, dressing and jalapeño.
Mix well and bake for another 10 minutes, until cheese is melted. Remove from oven and top with chopped green onion.

- Nuke potatoes or bake in the oven until fork-tender. Add to a large bowl and smash with a potato masher. Immediately add softened butter, green onions, bacon, and sour cream and stir with a rubber spatula. Add salt and pepper to taste. Add french fried onions and fold in.
