An authentic and favorite Mexican green bean recipe, ejotes con huevos or Mexican green beans with Eggs. Excellent as a vegetarian meal when served with refried beans. Or just as delicious when served as a side dish.

500 g or 1 lb. fresh green beans* (cut into even size pieces)
1 small onion (finely chopped)
1-2 chiles or as desired (finely chopped)
3 garlic cloves (minced)
1 medium tomato (finely chopped)
salt and ground black pepper (to taste)
1 tbsp olive oil (more if needed)
4 medium eggs (lightly beaten)
refried beans (make your own with my recipe**)
corn tortillas

Steps:

  • Heat oil in a large pan, once warm saute the onions until soft. Next, add the chiles, cook for 2 minutes then add the garlic and cook another 2 minutes. Add the green beans, tomatoes, salt, and pepper. Cook until green beans are to the desired texture. Once green beans are to desired texture pour the lightly beaten eggs into the pan. Stir and cook until eggs have cooked through. Try not to overcook or burn the eggs, as this will give the dish a bitter taste.

Number Of Ingredients 9

1 lb (450 gr) green beans (cut into 1 inch (2.5cm) bites)
6 medium eggs
1 ½ cup (300 gr) tomatos
1 medium onion
2-3 hot chilli peppers (optional)
3 Tbsp (40 gr) olive oil
½ tsp ground cumin
1 garlic clove (peeled)
salt and pepper

Steps:

  • In a pot, put the green beans, already cleaned and cut into 1 inch (2.5cm) bites. Cover them with 1.5 inch (3-4 cm) water and add a tablespoon of salt. Bring to a boil and simmer over medium heat for 5 minutes.
  • Drain the green beans and place them in a bowl. Set aside.
  • In a blender place the tomatoes, onion, chilli peppers (see notes) and the garlic clove peeled. Add 1 cup of water and blend until obtaining a smooth sauce.
  • In a saucepan heat the oil over medium-high heat. Add the tomato sauce and season with the cumin, salt and pepper to taste. Let the sauce simmer for 5 minutes on a medium low heat, taking care that it does not evaporate too much.
  • Add the green beans, mix and let everything cook for about 3 minutes.
  • Whisk the eggs lightly in a bowl and add them to the green beans. Do not mix immediately, let cook for half a minute, then start mixing slowly.
  • Adjust with salt and pepper. Continue cooking, mixing until the eggs are fully cooked.
  • Serve immediately with corn tortillas or toasted bread, refried beans and molcajete sauce.

  • Trim the beans and cut into 1" lengths; set aside. Using a mortar and pestle or possibly the flat of a heavy knife blade, mash the garlic to a paste with the salt. In a medium-large skillet, heat the oil til rippling over medium-high heat. Add in the crushed garlic and the onion; cook, stirring frequently, for 3 mins. Add in the beans and minced tomato and cook, stirring occasionally, for 5 to 7 mins. Add in the orange juice and lime juice, stirring well to combine. Add in the pepper and more salt if you like. Raise the heat to high and cook, stirring frequently, til the liquid is nearly evaporated, another 2 to 3 mins.
