2 c. plus 1/3 cup all-purpose flour
2 c. Coors Light
2 eggs beaten with ½ cup water
3 lb. chicken tenders
Salt and pepper, to taste

Steps:

  • Set aside 1/3 cup flour and whisk together the remaining 2 cups flour with Coors Light and beaten eggs. Season the batter to taste. Dredge chicken tenders in flour and then dip or roll tenders in batter. Deep-fry tenders in 375 degree F oil until deep golden brown. Drain on paper towels and serve with your favorite dipping sauce.

1?½ pounds boneless, skinless chicken breast halves
1 cup all-purpose flour
1 teaspoon baking powder
2 eggs, beaten
½ cup cold beer
3 cups oil for frying
½ cup all-purpose flour

Steps:

  • Rinse chicken, and slice into 1 inch strips. In a medium bowl, stir together 1 cup flour, and baking powder. Mix in the eggs and beer.
  • Heat oil in a deep heavy skillet to 375 degrees F (190 degrees C).
  • Place remaining 1/2 cup flour in a small bowl. Coat chicken strips in flour, then dip floured strips into the batter. Fry a few at a time in hot oil, turning once, until coating is golden brown on both sides. Remove, and keep warm until serving.

Working one at a time, dip chicken in flour, then egg mixture, and finally in bread crumbs, pressing to coat.  Working in batches, place chicken tenders in basket of air fryer, being sure to not overcrowd it. Spray the tops of chicken with cooking spray and cook at 400° for 5 minutes. Flip chicken over, spray the tops with more cooking spray and cook 5 minutes more. Repeat with remaining chicken tenders.  Make sauce: In a small bowl, whisk together mayonnaise, honey, dijon, and hot sauce, if using.
