This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

Yield 1 Cake

Number Of Ingredients 12

3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour, sifted
1 teaspoon salt
1 teaspoon baking soda
1 cup pecans or 1 cup walnuts, chopped
2 teaspoons vanilla
4 Granny Smith apples, about 3 1/2 apples (1 shredded, the others chopped fine)
1 cup light brown sugar
1/2 cup butter
1/2 cup milk

Steps:

  • Cream together the eggs, oil and sugar.
  • In a separate bowl, sift the flour, salt and baking soda.
  • Combine all.
  • Now add your nuts, vanilla and apples.
  • Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
  • Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
  • In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
  • When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.

  • Preheat oven to 350°. Place raisins, water and extract in a large microwave-save bowl; microwave, uncovered, on high for 1-1/2 minutes. Let stand 5 minutes. Drain. Add apples, 1/3 cup sugar, flour and cinnamon; toss to combine., In a small bowl, mix melted butter and oil; remove 2 teaspoons mixture for brushing top.   • Preheat oven to 190°C (170°C fan) mark 5 and put in a large baking tray to preheat. Peel, core and cut the apples into 2cm (3/4in) pieces. In a medium bowl, combine the sugar and cinnamon. Set aside about 1tbsp of the sugar mixture and mix the rest with the apples.

    Lay one sheet of filo on a large piece of baking parchment and brush with some of the  melted butter, then sprinkle over a little of the reserved sugar mixture. Lay on another sheet of filo and continue the buttering/sprinkling process until all the filo is stacked (reserve remaining butter and sugar mixture).

    Spoon the apple mixture on to the filo in a central line (lengthways), leaving a 2.5cm (1in)  pastry border at both ends. Fold the short sides on to the apples, then fold one of the long sides over the filling and continue to roll up (with the help of the parchment).

    Brush with remaining butter and sprinkle over remaining sugar mixture. Transfer strudel (still on parchment, seam-side down) on to the preheated baking tray. Bake for 30-35min until golden and crisp.
