Beijing Pancake recipe - Simple Chinese Food image

I saw a post from a Beijing chef on Weibo. I tried it and it was delicious. Modified slightly according to your own taste. You can also adjust it according to your own taste.

Number Of Ingredients 4

250 grams All-purpose flour
190g water
Right amount olive oil
Right amount Stuffing

Steps:

  • Pour the powder in the basin.
  • Pour the water in two batches, and pour half of it first.
  • Stir the flour with your hands, then add the remaining water and knead it.
  • It doesn't matter if the dough is softer!
  • Add a little olive oil.
  • Knead it into the dough with your hands.
  • Look at the mention below.
  • Pick up the dough and throw it into the bowl, about forty or fifty times. (The purpose is to make the dough smooth)
  • Brush the dough with oil and wrap it in plastic wrap to wake up for half an hour.
  • Sprinkle flour on the mat.
  • Roll out the dough and grease it with oil.
  • Sprinkle with a layer of powder.
  • Put the filling, mine is bacon and hot sauce, use a spatula to cut a strip from the center to the side of the dough.
  • Fold along the incision.
  • Pinch your mouth tightly.

  • The two sides are golden and ready to be out of the pan. Pick up the pie with both hands and gently tap the pie from top to bottom in the middle of your hands to make the layer of the pie better.

2 cups all-purpose flour
1 cup hot boiling water+ 20ml for adjusting
3 tablespoon sesame oil or other vegetable oil

Steps:

  • In a large bowl, stir in hot water. Set aside until cool down. Knead until smooth dough. Covered and rest for 20 minutes.
  • Divide the dough into 18 similar portions.
